I love watching Prickly Pear tunas (fruits) change color from green>pink>maroon so I used data visualization in my art to track the color change. On Day 19 I saw a Harris’s Antelope Ground Squirrel eating it & on Day 20 the tuna had fallen off the cactus, onto the ground.

Another kombucha processing day! My officemate's family did some prickly pear harvesting and preserving, and as a side product, I got some juice to try. So thanks for the idea, @jasaz! In a few days the second ferment will be ready for me to taste. Prickly pear juice has a very particular flavor (and is a wild magenta color!) so we'll see how it combines with my Irish black tea kombucha.

Prickly Pear (Opuntia) Fruit Beginning to Ripen in the Garden This Week
As summer winds down, the prickly pear cactus (Opuntia) is starting to ripen its fruit. I have 5 large cacti in the front and back garden, and they have reached maturity, so our harvest of fruit has been growing each year. Today, I spotted over 40 fruits at various stages of ripening. I am guessing they will all be ready for harvest once I return from a 2-week trip to Australia in September.
