    Ready In: 1hr 20mins
    Yields: 2 Quarts

    Ingredients
    Units: US

    - 2 quarts baby corn, immature field corn ears picked when only 2 or 3 inches long
    - 1 cup water
    - 2 cups sugar
    - 2 cups vinegar
    - 2 teaspoons salt
    - 1 tablespoon pickling spices, in a bag

    Directions

    - Husk and boil corn for 4 minutes-- no longer than that.
    - Pack into hot jars and cover with syrup made by boiling other ingredients 5 minutes.
    - Seal in jars according to manufacturers instructions.

    Comment from user [sterilizing jars is very important!]:
    "Pickled baby corn is lovely. I make mine a little differently: I use equal parts water, vinegar and sugar for the brine and don't put in the pickling spices - I like the clean, plain flavour of the corn. Also I am sure to sterilize the jars, and once sealed, pop them back into the boiling water for 10 minutes (250ml jars)."

    Little or no special equipment is required to put these goods away until you want them:

    #Apples: Apples keep well for about 6 months at temperatures above freezing but below 45°F. If you don’t have a root cellar, a double cardboard box in a cool basement can approximate the conditions.

    #Carrots: After harvesting, remove the green tops and brush off any excess dirt. Put the carrots into a cardboard box and pack dry sand around them. Store the box in a cool basement.

  7. I made a batch of these a couple of weeks ago after someone posted the recipe here, but I hadn't gotten around to trying them until last night. They are amazing. We had them as part of a sort of deconstructed Salade Nicoise with roast beets and steamed green beans and tuna; they'd also be awesome on a cheese sandwich, or really anyplace else you'd use pickles. I mostly followed the recipe, except I used apple cider vinegar and rice vinegar in a 50:50 ratio, used only half a star anise per jar, omitted the five spice and peppercorns, and added a dried chile de arbol to each jar. Highly recommended!

  8. Late June, first summer harvest! Three pickling cucumbers going into the refrigerator to become dill spears. Dill to make that happen. Other herbs (cilantro, basil, parsley) given hair cuts to keep them growing strong.

  10. Opened up my home made pickled coli flower today.

    Bought 3 heads for €5 at the farmers market in Nice last year and made this with broth from old store bought pickles, added some dill, chickpeas and home grown habanero and jalapeno peppers to it.

    It's delicious, crunchy, spicy, not so salty. TBF, it needs a little more salt. But it's great to have with food in the coming days and weeks.

  12. Back into #pickling again. This time my first attempt at green beans, which I blanched first as I understand raw green beans aren’t great on your system. The seasonings I used for pickling were garlic, mustard seeds and black peppercorns, and salt in the brine of white vinegar and water. #food

  13. With the big harvest of green tomatoes before the midweek frost of last week, I'm starting a batch of green tomato pickles which I enjoy so much.

    I don't have my mom's recipe of what was then called "green tomato chow chow" (?) Don't know where that name came from. Instead I have a few recipes of similar stuff, and I combine and elaborate on some amalgam of them.

  15. Not only did I can for the first time ever, but I made kiwi jam and kosher style dill green tomato pickles. I also made canning labels with my Cricut and inkjet printer with print then cut.
