  8. Looks like they turned out great! The roast is venison from a deer I harvested in 2024 - the last of that one. Potatoes, carrots and green beans canned from last year's garden harvest. Homemade sourdough dinner rolls.

  9. Just like the recipe said, I ended up with 9 pint jars of spaghetti sauce. And soon I'll be starting seeds for the 2026 garden! Wonder what I'll get to preserve next autumn/winter?

Here's the recipe I used - USDA (pre 2025) approved.

  10. In progress - the last of the frozen tomatoes from last autumn's harvest finally being made into spaghetti sauce.

Once it gets to the proper thickness, into the canner it goes!

  11. Got tomatoes tipping into “too ripe”? Turn them into small‑batch tomato jam with spring onion, garlic, ginger, sage & rosemary. Perfect on ham sandwiches or roast leftovers. Recipe: bdabooks.com.au/Blog/2025/pres

  12. Rain/wintry mix plus dropping temps? Time to grab more of the frozen tomatoes and make salsa!

  13. Anyway, one of a pack of five oranges I bought four days ago has rotted, gone blue, and leaked juice, leaving the others swimming and their skins dissolving. And since the intended consumer is too ill to eat much, I'm acting as backup cook, and having a go at #preserving the worst of them by frying. I'll put them in the fridge for a few days, along with some other things that weren't going to last.

I've never done this before, but it seems like it could be quite a good way of preparing them.

  14. Finally started working on the many.many.many tomatoes I froze during harvest.

I've never done salsas or anything like that, so I consulted my Univ. Georgia Home Preserving book and found a couple of recipes.

First up was "tomato taco sauce" which is basically a salsa with vinegar instead of lemon juice. It's really tasty!

  15. Aji Rojo jam! It ended up having a lot of red bell pepper because the aji peppers aren't very juicy. Either way, it tastes delicious and the leftovers in the pan are already setting. #food #chiles #peppers #preserving #cooking

  16. We might actually see some freezing temps here. I'm going to have to harvest my aji rojo chiles and prune the plant back so I can bring it indoors. I've probably got a pound or two of these small red chilies. Aji Rojo isn't spicy but otherwise tastes like a habanero. They keep well but I'm not going to eat them all before they go bad. What should I do with them? #food #chiles #peppers #gardening #preserving

  17. Last harvest of 2025!

They say to leave parsnips in for awhile after the frosts. We've had a few frosty mornings, so I thought mid-November was a good time to go get them.

A good haul! Much better than I've done in the past. I think my soil-regeneration efforts - cover crops, rotation and compost - are helping!

Now on to blanching and freezing these lovelies.

  18. First day post harvest madness underway: taco sauce starting to ferment, bruschetta in a jar ready to can, first batch of salsa verde in the hot water bath. So much left to do. 🌱 #gardening #preserving #peppers #tomatoes #oklahoma

  19. This weekend's output:

    19x Quince & Zucchini Chutney
    12x Quince Jelly
    7x Spicy Quince Jelly
    5x Pickled Jalapeños
    1x Bushed Yvan

(Plus the usual meal cooking, and a few kilo of smoked beef ribs... and now... the cleaning 😬)

  20. We have 2637g of the plain #quince extract. This year it has started to go deep red already, and has so much pectin that it's gelling up around the edges before I've even added sugar and boiled it down. So different to last year's small crop off the same tree!

The chilli & spice quince extract is still extracting.

I am running short of jars right now, have been rounding up all sorts, mainly a mix of what I have left of hexagonal jars, and a bunch of saved Promite jars (thanks to Kat's foresight!) Got them all in the dishwasher on a 70°C cycle.

Will add sugar and start cooking down the jellies in an hour or so.

For now... a second coffee and a sit-down. Feeling kinda bushed. Not sure what, if any, #allotment activity will occur today. (TBF on myself the #preserving ought to count as an allotment activity.)

  21. Dinner was a pretty quicky rustled up sorta Spaghetti Amatriciana made with the last of the roast tomato & garlic passata. Just add a bit of Romanian cured pork belly, a shallot, and some pecorino romano.

The tomatoes, garlic, and shallot all from the #allotment of course.

The new Weck jars arrived today, so this super rich passata has gone into the small ones for future pasta dinners. Six of them, about 3kg more passata for the passata store.

The Weck seals seem to have had a slight change of material and they're harder to get in place now it seems. Which is a bit of a pain, but worked out a technique for it.

  22. I didn't know what to expect from growing/harvesting amaranth, so this whole process has been a learning experience. I guess my method of getting the seed off the heads produces quite a bit of chaff because maybe 25% of what's the bowl actually was seed.

Not pictured is how I separated chaff from seed: a hair dryer and two cookie trays, and a slow pour out of the bowl. It worked. Mostly. Wow I have seed for both consuming and for planting next year!

  23. Decided to top up on Weck #preserving jars, mainly thanks to there being a 15% discount voucher in my INBOX. I got my current stock mainly from: world-of-bottles.co.uk/

I don't know how transferable/reusable it is but it worked for me and it is this: G6U1H4Z5

I've noticed they have a 20 year anniversary sale going on too.

They're based in Germany but thankfully they still ship to the UK.

My favourite jars are the 580ml and 850ml "inverted" style and the 1,050ml "tulip". Most of ours get filled with #allotment passata, but I also ferment in them, especially the tulip jars.

I decided to get some sauce bottles too, just going for a 250ml wide-neck "Vroni" for the sake of versatility. I also got some TO82 lids which I hope will fit existing jars I have where the lids are a bit too worn for re-use, but just in case I also grabbed a handful of matching 770ml hex jars. 😅

I'm getting over 50 different jars/etc with an excess of closures for under £100, inclusive of VAT and shipping.

  24. Got a cucumber glut? Don't let them go to waste! 🥒 Slice 'em up & pop in a jar with vinegar, sugar, salt, and dill for easy refrigerator pickles.
Amazing fact: Cleopatra reportedly believed her diet of pickles was a secret to her beauty! ✨

  25. Don't let your chive blossoms go to waste! 🌸 I'm making a stunning pink-hued chive blossom vinegar. Just steep the flowers in white wine vinegar for a week or two. It creates a beautiful, savory infusion that's perfect for salad dressings. So simple & delicious! #Preserving #EdibleFlowers

  26. Managed to knock up four little jars of pickled jalapeños whilst making dinner. Not bad going.

    Approximately this recipe: chillichump.com/honey-pickled-

It seemed apt since the jalapeños we are growing are Chilli Chump's "CC Jalapeño": chillichumpseeds.com/product/c

We have two of these plants at the #allotment, with one in the greenhouse, and one in the polytunnel, plus another at home in the porch (an overwintered but somewhat neglected plant.)
