I’m used to growing 12” to 18” pepper plants here. This habanero turned into a huge bush. Tomorrow, I’ll pick some more, and, with what I have stored in the fridge, make about a quart of salsa.

Habanero Hot Pepper Flakes
These flakes bring bright heat with a little smoky edge. A tiny sprinkle goes a long way.
Shake them over eggs, soups, tacos, or anything that needs extra spark. They store well and last a long time.
How hot do you like your food on a scale of 1 to 10? 🔥👇

I kinda forgot about this chili series because after cooking this dish I went to a chili festival and tried so many chili sauces and other chili stuff and bought so many sauces I was pretty busy with tasting them and also the whole unemployment shit.
Anyhow, I made a Senegalese Mafé which was very delicious. I had planned to make this for ages and kinda assumed it would be spicy, but then it turned out most recipes only use a bit of cayenne pepper for spice. It took me a bit to find one that uses a scotch bonnet chili which is pretty close to habaneros so I used two habaneros and two teaspoons of cayenne pepper instead of the recommended half tablespoon.
The recipe is pretty simple. Fry whatever meat you want (originally they use beef, I used chicken because that was on sale and already cut in handy strips), add your diced onions, ground garlic and ginger, then a bunch of peanut butter (I used about 5 heaped tablespoons of pure ground peanuts from some Asian store on 800g of chicken), throw a bunch of diced vegetables in (I used carrots, zucchini and bell pepper, about equal weight as the meat), pour in chicken stock (or beef or vegetable stock) so everything's somewhat covered or to whatever consistency you enjoy, then let simmer for some random amount of time.
Spice was pretty nice, the two habaneros plus the two teaspoons of cayenne pepper were nicely balanced out by the fatty sweet peanut stuff. The thing I made actually was pretty close to the Massaman Curry I made some time ago, just more peanutty.
As for the habanero countdown: I used two but I also gave three to a fellow chili enthusiast to play with, so I'm down to nine habaneros (I believe). So I assume I'm done to 8?!
Also I gave a portion of the Mafé to a local barkeeper because I made way too much and he loved it despite him being a very difficult person to deal with so I think that speaks for the recipe.

Its crazy how much knowledge we just intrinsically know that we were never explicitly taught.
Like, we were eating #FriedChicken so I asked my daughter, [Byte, 7] to grab the #HotSauce
She came back with a Calabrian chili one. I sent her back to the shelf to grab the right one. She came back with a local farmers market number that was high in Scotch Bonnet or #Habanero
I finally showed her the correct one, but what do you "know" is the right one?

Third round of the habanero countdown.
A short update without recipe because I just made a classic chili con carne yesterday and everyone probably got their own favorite recipe already. I used two habaneros, about three heaped tablespoons of ground chipotle, then remembered I also have non-ground chipotlel and threw one in on top for extra smoky flavor. I don't know if I'm desensitized by now or something else was going on with the dish but the two habaneros were barely noticeable, I should've used four or five at least. Tried to compensate with an unmeasured but considerable amount of gochugaru but that didn't help much.
Habanero count: two used yesterday (five total), 14 left.

Second round of the habanero countdown!
Today I made "Swamp Soup", which I think is a dish from Louisiana and got its name because it looks like stuff floating around in the bayous. I'm not gonna link to a recipe because I changed pretty much everything from the one I used originally when I made this the first time.
All recipes I found use some kind of "greens" (turnip or collard greens) that I've never heard of and that are not widely available in supermarkets here, so I started with a glass of green beans (~650g including some liquid) instead and dumped it into my instant pot. I didn't measure but I peeled and cubed about 1kg of potatoes I think, then one massive onion and one rather big bell pepper. I only used one habanero for the dish because I thought the fruity notes might not go too well with the rather earthy winter-food style of the dish. Also I added about three tablespoons of "Blackened Cajun Seasoning" and as far as I understand the main difference between "blackened" and "normal" Cajun spice mix is that "blackened" has a ton more of cayenne pepper, so it's already kinda spicy as it is. For meat I cut 4 "Mettenden" (coarsely ground cold-smoked German pork sausage) into smallish pieces. I only got the "micro" instant pot so with all this stuff it was already at the max line of the pot, otherwise I'd probably add some carrots or something as well. I filled it up with broth so the everything was just barely covered and set the machine to 8 minutes pressure cooking which I found is a good time for squeezing all that delicious smoky salty fat out of the sausages into the soup while still leaving the sausage chunks themselves somewhat juicy, it does slightly overcook the potatoes however but I mean it's a soup after all so that's fine.
It's a nice dish for cold weather I think. The recipe is almost identical to how I make a quick and dirty soupy instant pot version of classic German kale with Mettenden actually, just leave the spicy stuff out and only use kale, potatoes and onions for vegetables (I'm sure for some this will qualify as rage bait).
Habanero count: 1 used today (3 in total), down to 16 in the freezer.

Recently I found habaneros on sale so I ordered 1kg for really cheap. I somehow expected it to be much more in numbers (like, in the hundreds) because I mean they're hollow and small and not very heavy, so I got two friends to chip in and we divided the loot by three. The habaneros however turned out to be rather big fleshy heavy ones, not the sad wrinkly stuff you find in the average supermarket, so we ended up with only 19 pieces per shareholder, a very much countable amount where you don't just throw a handful into a dish.
Today I used the first ones and I thought I'll just post a little habanero countdown here whenever I use some along with the recipe, mostly for my own entertainment and maybe someone out there is interested in spicy recipes, who knows.
Today I made "Picadillo de Carne Molida con Papas", or just Picadillo for short in Mexico, where as far as I understand the "de Carne Molida con Papas" (ground meat with potatoes) is implied. I used this recipe as a base:
https://keytomylime.com/mexican-picadillo-con-papas-recipe/#mv-creation-169-jtr
The recipe suggests one habanero, I went with two and also used one full huge onion because what would I do with the other half? The heat level was good and I liked how the fruity notes of the habaneros work with the fresh cilantro. After tasting I thought it could do with a third habanero but because it was pretty much at the end of the cooking process I didn't want to get back to the chopping board and instead threw two heaped tablespoons of ground chipotle in for some more warmth. I also don't do half teaspoons so I went with a full tablespoon of cumin and then a second one. I also put in more potatoes than the recipe suggests because for me potatoes are a side dish and making an extra side like rice or whatever for a dish that already has potatoes doesn't make sense at all, but with the suggested amount the ratio of meat to sides just didn't check out.
Overall a good simple dish.
Habanero count: 2 used, 17 left.

Made a batch of spicy sauce using habanero and jalapeno peppers from the balcony garden, plus some sun dried tomatoes (shooed in italy) and some cherry tomatoes from the balcony with olive oil and juice of pomegranate (from the park next door).
It's delicious and very very spicy.
Used one table spoon of it in the tomato sauce for pasta and it had a good spicy taste (not much, but enough to make it taste good).
Filled one bottle for my daughter to take with her to Brussels and the rest will be used at home.

Biggest harvest of habanero peppers from one plant on the balcony.
The heatwave seems to be working magic for my pepper plants, specially the habaneros.
The plant is full of flowers and small fruits and I picked these from it today to dry and use in cooking later.

Is there anything #GarageProject doesn't do? 😁 Nice addition to the hot sauce collection... Barrel aged, manuka smoked, habanero 'sour beer' hot sauce.

Another spicy bagel lunch... #PlantBased 😋 On the left: poppy seed bagel half with Seasons Hummus With Kawakawa (Bush Basil), tomato, tajín spice, jalapeño slices and cornichon.
On the right: the other bagel half 😄 with Barker's Pineapple & Habanero Relish, tomato, tajín spice, jalapeño slices and cornichon... The relish worked really well with the tomato.

Opened up my home made pickled coli flower today.
Bought 3 heads for €5 at the farmers market in Nice last year and made this with broth from old store bought pickles, added some dill, chickpeas and home grown habanero and jalapeno peppers to it.
It's delicious, crunchy, spicy, not so salty. TBF, it needs a little more salt. But it's great to have with food in the coming days and weeks.

Spicy in commercial products is almost never really spicy. Barker's new relish range is a positive exception.
Sweet pineapple with a blast of habanero yet well-balanced.... But probably too spicy for the average consumer so I better stock up as this might be a short-lived product.

I need to find those wiggly eye stickers for my Habanero pepper.
This one looks like a face and with eyes, it would look so funny.
Too lazy to edit it manually to add them on it.

#Hydroponic #jalapeno harvest time again.
I think I'm going to make jalapeno bread this time, or use them in mix with #habanero to make spicy sauce.
I haven't bought any peppers in 3 years.
My other plants died, but I'm waiting until I've sold this apartment to start new plants.
