  1. Not only did I can for the first time ever, but I made kiwi jam and kosher style dill green tomato pickles. I also made canning labels with my Cricut and inkjet printer with print then cut.

  3. Recipe recommendation: Pickled Fennel Agrodolce milkwood.net/2015/10/09/pickle. I made this 3+ years ago when I didn't want to waste a bunch of fennel stalks. Kept it on the shelf, no hot canning, and it's perfectly good today. Just used it to make this WaPo cabbage, fennel, white bean soup (gift link wapo.st/3D0vL8K).

  11. It's so nice to get home and not have tomatoes staring at me.

    I always start out #CanningSeason so gung-ho about the idea of laying food by for later, and end up tired of looking at jars and produce.

    I will 100% forget this feeling by next summer, and probably by February when I do the citrus stuff. For now, however, I'm just going to enjoy myself a grilled cheese, with some of the ketchup I made, and go to bed at a reasonable hour for me.

  12. Canstravaganza! A view of part of the shelving in my garage dedicated to my canning output.

    Last night I got strange spasms in my left hand that went clear up my forearm. I attribute it to an entire weekend of food prep, holding heavy pans with my left hand so I could do things with my right, general overuse. My husband had to uncurl my contracted thumb slowly and hold it out to end the worst spasms.

  14. (This is going to take a while since I'm photographing it as I do it.)

    ➡️ Step 2. Rinse them in plain water.

    ➡️ Step 3. Cut the woody part out (the pedicel, the part where it joins the to the vine) and any spots.

    ➡️ Step 4. Place on a (non-stick ideally) roasting tray.

    I put whole tomatoes on one tray for roasting and partial tomatoes on a separate tray for pizza sauce.

    Yes! We are going to roast the tomatoes. Not only do roasted tomatoes taste better than plain blanched tomatoes, they slip nicely out of their skins over the jar and you don't have to do the whole Xing thing and peel them.
