Welcome to the latest episode of Cooking With Compost... straight out of the compost bin at the Burlington #Vermont food shelf, some rather hideous eggplants and some tomatoes that are actually fine they just got packed in a box with too many tomatoes and had splits, so the staff discarded them. Not gonna argue with their choices because probably nobody would take them. Damaged goods often sit out for hours with no takers, but I know from experience that hideous eggplants are generally fine and I'm going to stew up this mess and make a baked pasta dish out of it. I check the eggplants with my nose and they smell like... eggplant #Cooking
