A coworker held a sourdough baking day at the office. This is babby's first sourdough bread and I can't believe how well it turned out. It's got the bubbles!
I got a starter to bring home with me and now the challenge is can I replicate this success by myself. And I need to add in some oats since my wife loves oat-wheat bread.

Gorgeous autumn day in central Illinois.
55°F (12.7°C) with mahogany and gold leaves falling in the yard, squirrels storing and eating for winter, and a light breeze.I've finally gotten my starters mature enough to make delicious bread, so I decided that today would be a great day to make some more sourdough.
Here's a recent loaf, made with today's recipe.

Finally. After working to make sourdough bread for 3 months, we have a loaf I'm very happy with! Even the crumb was exactly what I had hoped to bake and eat.
I'd bet I won't have the same success with the every loaf, but I am satisfied that I finally figured out how to get to this point and savor this bread. (It is already half gone.)

Good morning, Mastodon! It's a lovely cool 53 degrees here in central Illinois, welcome relief from weeks of intense heat and humidity.
Since I've been under the weather with a recurring asthma issue that's kept me indoors far much this summer, I've been baking a lot of bread. Here's my most recent loaf. I'm still learning the art, craft, and science of this culinary skill--and it's been fun, too!

Since the heat index has kept me indoors for a long time this summer, I began working on making sourdough bread, something that many people did during the pandemic lockdown. I'd made bread before but never sourdough.
Quite an odyssey to make my own starter--quite temperature dependent. I really tinkered with it over a few weeks. Made my first bread yesterday. Here's a photo to show that we got a decent and edible product.
Working on improving it.

Later this weekend I had wanted to do some baking, but it seems that I won’t be baking any sourdough. My starter has fallen victim to Kahm yeast 😢 On the upside, I can now start a new one!
