  6. The usual Country Brown pure bread, more or less following Ken Forkish's recipe. Today I increased the baking time with the lid on by another minute and baked at 470 F. I'm getting closer to where I want to be!

  10. #photooftheday this city bakery we stopped at had a 24hr 🥖 Baguette vending machine! 😹

    I cannot think of something more Quintessentially French:

    - Epitomises a cultural stereotype (National obsession with freshly baked bread)

    - Upsets food purists (No! The bread must be hand baked by an artisan!)

    - and thus invokes a philosophical quandary - cue heated debate about what defines "fresh" "bakery" and "artisanal" bread :)

  11. Pure cuboid rye bread. An easy bake, if you don't mind sticky dough. I even did do mistakes and it's still fine. A bread just like a guppy. Forgiving. May its beneficial digestive properties gift alleviation in these dark times.

  13. You know, the trick about that #baguette crust is to not just somehow cut the bread open, but to keep the open line from folding through the rolling (cut only if the folds merged) and bake it open side up. e-viola.
