I tried again to recreate my mom's mushroom and rice recipe without onions. This time I used four types of mushrooms and twice as many altogether. I also tripled the herbs. (It was too much marjoram but that has inspired me for next time. I'm going to add rosemary and parsley to the sage, thyme and marjoram.) I put a third of the herbs and a finely diced stalk of celery in with the rice to cook since I'm not using broth.

The finished dish. It's tasty, but it lacks punch. I think that if I'm going to omit the two white onions, I'm going to need to double the mushrooms. And maybe also triple the fresh herbs. (Plus add herbs to the cooking rice if I'm using water rather than broth.)

@DoomsdaysCW Another idea: In my area wild garlic (#alliumursinum, super tasty) grows first. The lily of the valley (#convallariamajalis, very poisonous) joins in later. The leaves are quite similar. To avoid confusing wild garlic leaves with the ones of the #lilyofthevalley, one can plant two or three lilys of the valley in an ideal spot in the garden (with a rhizome barrier, though!). As soon as the first leaf tips appear there, take extra care when collecting #wildgarlic.
