    Got up early to dress and adjust flavors on the salad. I added a little more vinegar and soy. I also decided to spare myself a couple energy-spoons and put the scallions and sesame seeds on now. Still bringing the seeds and the jar of chili crisp along for on-site add-ons. I put just a little of the oil from the chili crisp in the salad earlier and I can already taste it in there, so I'm going to leave any additional heat optional for the diner. Wonder how long before that little jar runs dry? 😆

    By the way, here's the main recipe I'm following - as always, I tend to compare and contrast a bunch of recipes for a given dish till I winnow out a general heuristic to follow. Some recipes specified the make-ahead strategy of waiting to add the dressing, so I went with that; I also added some toasted sesame oil to the dressing and left out the Thai bird chilies. But I'm all in on the Lao Gan Ma chile crisp - in fact, that's one of the reasons I zeroed in on this recipe, besides the fact that I follow this vlogger's YouTube channel and dig her cooking lessons lots. But the chili crisp ... I used to be addicted to the stuff until my gut decided it couldn't deal with that much heat in quantity, so my strategy is to only buy the stuff when I'm making a dish that will use up a bunch of it. And I'm planning to take the jar to the potluck - that should put a dent in it! 😄

    The cukes, before and after their smackdown, along with some bell pepper and red onion for extra pops of color. The veggies are now chilling in the fridge after purging some of their water. Not shown: the dressing, in a separate container in the fridge, and some sliced scallions, also chilling in their own container.

    These kinds of cookery posts majorly help keep me on track and motivated to finish projects despite the constant lowkey messages of "I don't wanna" from cranky-ass bod and neurospicy brain - so I thank you all for indulging me! 😅

    For the first time in a good while, I have a non-routine cooking project on tap for this weekend: a smashed-cucumber salad I'm bringing to a community potluck tomorrow afternoon. My game plan is to do all the prep today, wait to put the dressing on the veggies until tomorrow morning, and shlep little containers of the final topping bits along with the salad to the picnic site to add right before serving so they don't get all tossed around in transit. A nice easy pace for a cranky-bodded chef - plus excuses to smack one's foodstuffs are so cathartic 😄

    Chinese chive (which does not come from garlic, despite Wikipedia calls it "garlic chive")is a very common herb consumed in almost all region of China. It is mostly used as stuffings in dumplings or pancakes, it goes well with both pork and beef, also is a great vegetarian option when mixed with scrambled egg.
