7. broil fish for about 5-10 minutes. watch it closely to keep it from burning

Gajar ka Halwa (Carrot Halwa)
Gajar ka Halwa is a North Indian winter specialty, especially in Punjab and Delhi. It became popular during the Mughal period when slow milk reductions, nuts, and aromatic spices created a whole category of desserts. Traditionally, this was made with desi gajar, the deep red winter carrots, which are sweeter, denser, and less watery than the orange ones you usually find year-round. In the traditional method, grated carrots are simmered in full-fat milk, sometimes for over an hour, until the milk reduces and clings to the carrot fibers. Sugar comes later, and ghee is added toward the end. The carrots infused with dairy fat and lactose create that concentrated flavor through slow evaporation, allowing the natural sugars to develop beautifully. The result is softer, richer, and much more cohesive than versions that skip the milk step. Very few ingredients are needed for this dish so the key here is patience @sarchakra
PREP TIME: 20 mins
COOK TIME: 60 mins
SERVES: 6
Ingredients
- Carrots 6–7 large
- Sugar 1½ cups (adjust to taste)
- Milk powder 1 cup plus 2 tbsp for serving
- Water 1 cup
- Green cardamom pods 8-9, seeds powdered
- Unsalted butter 2 sticks
- Nuts (almonds, pistachios, raisins, cashews)
- Ghee 1 tbsp (to saute the nuts)
Method
- In a pan, add ghee. Saute the raisins and nuts separately till golden and aromatic. Keep aside.
- Wash and peel the carrots. Grate the carrots in a food processor. Crush the green cardamom seeds to a fine powder in a mortar and pestle. Keep aside.
- Add the grated carrots and water to a wide pan. Cover and cook on low until softened for about 20 mins.
- Sprinkle sugar over the top, don’t stir immediately. Let it melt slightly, then gently fold in. This prevents scorching and keeps the texture intact. Cook covered for 10–15 mins.
- Add cardamom powder and butter. Let the butter melt fully before stirring. Now cook uncovered, stirring occasionally, until the moisture evaporates and the mixture thickens and turns glossy. You will see fat begin to separate, that’s your cue. This should take about 15 mins.
- Sprinkle in milk powder gradually, stirring gently to avoid clumps. Do not mix too much. Cover on the lowest heat for another 10-15 mins to let it integrate.
- Let it sit off heat for at least 10 mins. It tightens and deepens as it rests.
- Sprinkle some nuts sauted in ghee and 2 tbsp of milk powder. Gajar ka halwa is ready to be served.
Notes
Do not add too much fat too early as that makes the dish greasy and not rich.
Do not rush the evaporation process. Otherwise you will get mash, instead of halwa.
Do not add the sugar too soon. The carrots will not soften properly.
Do not skip the reduction cues- the ‘separated ghee’ stage is non-negotiable.
For a faster, creamier version you can use condensed milk.
Khoya (mawa) added at the end makes a dense, almost fudge-like texture.
You can cook the carrots in a pressure cooker. This method is efficient, but sacrifices that layered reduction.
Roasting the carrots before cooking intensifies the sweetness and adds a subtle caramel note.
Use jaggery instead of sugar for an earthier, slightly smoky sweetness.
For a vegan version use coconut milk or almond milk, though the flavor profile shifts significantly.
Serving suggestions
Use a ring mold or quenelle it for structure.
Add a crumble of toasted pistachio or almond praline.
Warm the halwa with a small scoop of saffron ice cream or malai kulfi.
Finish with a light drizzle of browned butter or ghee.
For a darker, dramatic mood use a matte black, deep stone, or even a brushed metal platter.
Microplane a touch of fresh nutmeg or add a whisper of rose petal for decoration.

Orange Cookie Sticks with Dark Chocolate
There are some flavour combinations I don’t think I could ever get bored of, and chocolate and orange is definitely one of them. The freshness of orange zest against rich dark chocolate works beautifully in cakes, desserts and, of course, cookies.
I initially set out to make a very simple batch of orange cookie sticks—something crisp that the kids could snack on. But once they were dipped in glossy dark chocolate and finished with a little edible silver foil, they suddenly looked far more luxurious than the simple ingredients would suggest.
Orange chocolate cookie sticksAnd that is something I love about food styling too. Sometimes it isn’t about creating an elaborate recipe. A small finishing detail can completely change how familiar food is perceived. These cookie sticks went from simple homemade biscuits to something that would look quite at home on a festive dessert table or wrapped beautifully as an edible gift.
My kids had their own plans for them, though. They loved dunking the orange cookie sticks into warm milk, while the adults reached for coffee. I can confirm that both combinations work equally well!
Why Chocolate and Orange Work So Well
Orange brings freshness, fragrance, and just enough acidity to balance the richness of chocolate. For these cookies, I use both fresh orange zest and orange juice, so the citrus flavour comes through without needing artificial flavouring.
The cookie itself is crisp and buttery, while the dark chocolate coating adds richness. You can dip just one end of each cookie stick, drizzle chocolate over them, or coat half the stick depending on the look you prefer.
And while the edible silver foil is completely optional, just a few tiny pieces make these orange chocolate cookies look especially elegant.
Orange chocolate cookie sticksPrep time: 20 minutes
Baking time: 15–18 minutes
Makes: Approximately 20–24 cookie sticks, depending on sizeIngredients
- All-purpose flour: 250 g
- Sugar 100 g
- Butter, softened: 110 g
- Vanilla 1tsp
- Zest of 1 orange
- Fresh orange juice, plus a little extra if needed: 4 tbsp
- Dark chocolate, 100 g
- Edible silver foil, optional
Method
- In a mixing bowl, combine orange zest and sugar so the citrus oils and fragrance distribute throughout the mixture. Add the softened butter and mix well.
- Gradually add the flour. Use your hands to mix until you get a crumbly texture. Take the mixture to a surface or keep kneading in the bowl until everything comes together. Use orange juice, a tablespoon at a time, to bring everything together and form a dough.
- Add a little more orange juice if necessary, but only enough to help the dough come together. You want a dough that is firm and easy to shape, not sticky.
- Roll the dough out on a lightly floured surface to roughly 5–7 mm thickness. Cut it into long rectangular strips to create cookie sticks. Try to keep them similar in size so they bake evenly. Chill for an hour before transferring.
- Transfer the sticks carefully to a baking tray lined with baking paper. Preheat the oven to 170°C. Bake for approximately 15–18 minutes, or until the edges are lightly golden. The exact baking time will depend on the thickness and length of your cookie sticks.
- Allow them to cool for a few minutes on the baking tray before transferring them to a wire rack to cool completely. Melt the dark chocolate gently in a heatproof bowl over simmering water or in short intervals in the microwave.
- Once the cookie sticks are completely cool, dip one end of each stick into the melted chocolate. Place them on baking paper and allow the chocolate to set slightly. Once it sets completely, carefully add tiny pieces of edible silver foil to the chocolate. Leave the cookies until the chocolate has completely firmed up.
Tips for the Best Orange Cookie Sticks
- Use fresh orange zest. Most of the orange aroma comes from the oils in the peel.
- Add the orange juice gradually. Different flours absorb liquid differently, so you may need slightly more than 4 tablespoons.
- Don’t make the dough too soft, or the cookie sticks may lose their shape while baking.
- Let the cookies cool completely before dipping them in chocolate.
- Dark chocolate works particularly well because its slight bitterness balances the sweetness and citrus flavour.
- Use only small touches of silver foil—a little goes a long way.
Simple Cookies That Look a Little Special
This recipe is a good reminder that something doesn’t need dozens of ingredients to feel special.
Flour, butter, sugar, fresh orange, and chocolate create a wonderfully simple cookie. Change the shape from the usual round biscuit into elegant sticks, dip them in dark chocolate, add the tiniest touch of silver—and suddenly you have a dessert that feels far more indulgent.
Maybe that is another reason I keep coming back to chocolate and orange desserts. The combination needs very little help. It already has the richness, freshness, and contrast that makes a dessert memorable.
And judging by how quickly these disappeared between cups of coffee and mugs of warm milk, I suspect I will be making them again very soon.
