I almost always include ginger in my congee, and will also sometimes add: poria cocos / fu ling, orange peel / chen pi, shiitake mushrooms, astragalus, honey fried licorice root, goji berries, jujubes, and/or longan.

Made samgyetang (Korean chicken ginseng soup) for dinner.
It was surprisingly simple for how overwhelming the recipe made it seem. I thought it was delicious. My husband wasn't a fan - but he didn't add the salt & pepper as the recipe suggests.
The jujubes were new to me & I loved the flavor they added.

@Laighe I'm aging. it's normal for seniors to get less sleep but this is a bit much. I always thrived on 4 hours, I had a background in 4 hour sleep sessions (Navy) but if I am interrupted, for any reason, a pee, a cat, a car squealing tires, that's the start of my day, no matter if it is 1am or 3am. I prefer 5am.
