    It’s been chilly here and I’ve been making pots of comforting, rice-based soups. They’re filling, easy to make, and last for a few meals. My favorite, and easiest, is Amy + Jacky’s Instant Pot Chicken Congee.

    The base recipe is rice, chicken, ginger, and water. I use boneless skinless chicken thighs and I don’t even have to shred the chicken after cooking — it just falls apart in the soup. Once it’s thickened and seasoned with salt, I ladle it out and choose my toppings. I love drizzling it with tamari and sesame oil. My other preferred toppings are green onions, vegetable dumplings, furikake, roasted vegetables, and snow peas.

    The other rice-based soups that I’ve made recently that I liked were Downshiftology’s Stuffed Pepper Soup and Cabbage Roll Soup.

    Enjoyed my yogurts outdoors, while listening to juncos & house sparrows singing 😀

    Additional antibiotics are being picked up right now. I'm using Colgate #Peroxyl #antiseptic #mouthwash to help my gums to heal & to help prevent getting too many mouth sores. I rinse with that, after gentle warm water mouth swirling rinse.

    I'm supposed to take my immediates out tonight to clean them; put back in the morning. I'm going to wait til late evening to remove for the night. I want to keep them in for longer to help my gums to heal better & to not lose shape.

  14. I made a ‘four egg congee’.

    ‘Three types of eggs’ is a common Cantonese dish: think chawanmushi, so like steamed egg custard with the right amount of of water (1 to 2.5 for Japanese style, 1 to 2 for Chinese style) with added: century egg, and salted egg. That’s a dish you can order lots of places.

    So my four egg congee is all of that, plus egg tofu.

  19. Another naive #millet experiment: kodo millet #congee (20g millet, 270g water, 30 minutes). It absorbs SO much water! Hard to believe it will absorb 12--15 times its own weight - you'll think the measurements are wrong, but no!
    Tasting notes: plain #kodo really tastes to me like pudding rice. Against tamarind, it highlights its sweetness. Against kimchi it's just bland/tasteless. Against sweet chilli sauce, it's nutty! #kitchendiary #iym2023

I realized that I had never tried congee so I stopped into an old cafe and made my way to the counter. I ordered a bowl. When it was served the old woman who brought it put a few nails on top.
