I used a cooking method where you allow the meat to come up to room temperature (~70°F/21°C), slather it with heavily seasoned butter, then you roast it in the oven at 500°F/260°C for exactly five minutes per pound to get a sear on the outside. You then turn the oven off and leave the meat in the oven, allowing the internal temp to rise to 125°F/52°C before pulling it out to rest. This method is SO EASY and the results are incredibly delicious!
