Bitter Norwegian pale ale 6%
Using 1ml of hop extract at 60 minutes produced way more than the 10 IBUs I was told it would. This beer is quite bitter. I mitigated it a bit by adding calcium chloride to the finished beer, but it's still fairly bitter. I am a bit concerned for the 10 gallons of lager that got 4 ml of the exact (it's still fermenting).

Much needed full-day date today to celebrate my minor victory. Amazing coffee and conversation as usual at the best place in the city, casual walk around the harbor, beer and kombucha at a local dive, an Italian dinner in Little Italy at a place with a full vegan menu...
Absolutely amazed that they were able to get both the flavor and texture of calamari that close using only pea protein, and that puttanesca...holy fucking dog, the house-brined calamata olives and capers with that fresh-crushed San Marzano sauce were nothing less than mind-blowing. Otherwise simple food that was well worth that (expensive) price of admission.
Finished off the evening with an orgasmic barrel-aged barleywine...and the trolley cuddles on the way home were icing on the cake. A good day. <3

Wow. Big (and sad) news that all the Escondido Stone Brewing sites will be shut down (or at least sold, not clear who would or could buy facilities that large). I used to travel to Camp Pendleton for work and recall watching the Escondido construction, eagerly awaiting its opening.
