For anyone with allergies, I just found out that a lot of companies use potato starch to seal teabags in the UK, not sure about other countries.
I don’t drink tea, and usually have dried mint leaves if I have peppermint tea.
We need nightshade and allium highlighted on food. Someone could get very sick because of this.

This is vegan, gluten free, nightshade (and allium) free, also gum free and as low histamine, as I can get. It turned out really well, nice crust and texture. It tastes good, nice toasted, and no weird aftertaste.
Sorghum Bread
A vegan, gluten free and gum free recipe.
Prep time: 15 mins + 60 mins rise
Cook time: 60 mins
Cooling 2hrs
Yields: 1 loafIngredients
Dry:
1.5 cups (180g) Sorghum Flour
1 cup (120g) Tapioca Starch (or Arrowroot)
half cup (60g) Brown Rice Flour
2 tsp Instant Yeast (ensure certified gluten-
free)
1-2 tbsp Maple Syrup (sugar feeds yeast)
1tsp SaltWet:
1 and a quarter to 1.5 cups Warm Water
3 tbsp Olive Oil
1 tsp Apple Cider VinegarInstructions:
1. Activate Yeast: In a small bowl, combine
warm water, maple syrup, and yeast. Let it sit
for 5-10 minutes until foamy.2. Mix Dry Ingredients: In a large bowl, whisk
together sorghum flour, tapioca starch, brown
rice flour, and salt.3. Combine: Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients. Use a hand mixer or stand mixer to combine for 2-3 minutes. The dough should be thick and sticky, not pourable like cake batter.
4. Proof: Transfer the dough into a parchment-
lined 2lb loaf tin. Smooth the top with wet
fingers or a spatula. Cover with a damp towel
and let it rise in a warm place for 60 minutes
or until doubled in size.5. Bake: Preheat oven to 375°F (190°C). Bake
for 50-60 minutes. The loaf is done when it is
golden brown, sounds hollow when tapped,
and has pulled away slightly from the sides.6. Cool: Allow the bread to cool completely in
the tin before slicing, otherwise, the center
will be gummy.Notes: As this recipe contains no gums or
psyllium, the tapioca starch acting as the binder requires a full cool-down to set the
Structure.I cooked in my air fryer oven 185 • c on bake, and completely cool down in tin for 2 hours before removing and slicing.
I’m moving soon, and packed my loaf tins, as didn’t expect to have the spoons to try a new recipe before the move. I used a smallish Pyrex this time, but will use the loaf time next time.

Does anyone else get zaps? Like little electric shocks in their body. Had some scary ones across my chest this morning, they didn’t hurt, but very uncomfortable.
Apparently could be linked to POTS or mould, which would fit with the MCAS and histamine intolerance.
I’m seeing my gp on Tuesday, but will go to walk in/emergency if gets worse etc.

I’m so tired, that I just put pain relief gel on my hives, instead of hydrocortisone, and have made the hives angrier. I don’t use it very often, I just wanted some itch relief while I try to go to sleep 😞

New weird MCAS symptom? Food that isn't actually spicy tastes "spicy", kinda like the sensation in the mouth after eating something peppery or with chili in it.
It's very weird. Like, I just ate a Twix (chocolate can trigger MCAS attacks) and after eating, I had the sensation of something peppery on my tongue.
But gosh damn I really wanted a chocolate bar.

Having a major attack of likely MCAS which involved tonnes of mucus coming from nose & throat, tightness in the throat, near vomiting, uncontrollable shaking and a temperature spike — the only way I could calm was by somehow grabbing my shower head and running icy cold water over my head until my temperature dropped to 35c / 95f
And now I've tonnes of flatulence and other stomach stuff. I'm still producing mucus and coughing, my muscles are all tight.
Why? Because I dared eat some food which wouldn't normally trigger an attack but did today because I've had to have my windows open due to heat & humidity inside and other reasons.
Will probably have other issues later. Can't take my strong medication because I don't have enough of it & need to conserve it.
Guess I won't be getting much work done today.

Long Covid can cause MCAS (mast cell activation syndrome) which gives many people alcohol intolerance.
I’m wildly allergic to alcohol and as my condition progressed I become unable to even be around open booze.
This graph shows the decline in alcohol sales in San Francisco from 2023 to 2024. Notice red wine is at the top - and it’s known to be one of the worst for those with MCAS.

Naturopathic doctors often recommend incorporating foods rich in vitamin C, vitamin B6, magnesium, and copper, as they are known to support histamine metabolism.
