This is vegan, gluten free, nightshade (and allium) free, also gum free and as low histamine, as I can get. It turned out really well, nice crust and texture. It tastes good, nice toasted, and no weird aftertaste.
Sorghum Bread
A vegan, gluten free and gum free recipe.
Prep time: 15 mins + 60 mins rise
Cook time: 60 mins
Cooling 2hrs
Yields: 1 loafIngredients
Dry:
1.5 cups (180g) Sorghum Flour
1 cup (120g) Tapioca Starch (or Arrowroot)
half cup (60g) Brown Rice Flour
2 tsp Instant Yeast (ensure certified gluten-
free)
1-2 tbsp Maple Syrup (sugar feeds yeast)
1tsp SaltWet:
1 and a quarter to 1.5 cups Warm Water
3 tbsp Olive Oil
1 tsp Apple Cider VinegarInstructions:
1. Activate Yeast: In a small bowl, combine
warm water, maple syrup, and yeast. Let it sit
for 5-10 minutes until foamy.2. Mix Dry Ingredients: In a large bowl, whisk
together sorghum flour, tapioca starch, brown
rice flour, and salt.3. Combine: Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients. Use a hand mixer or stand mixer to combine for 2-3 minutes. The dough should be thick and sticky, not pourable like cake batter.
4. Proof: Transfer the dough into a parchment-
lined 2lb loaf tin. Smooth the top with wet
fingers or a spatula. Cover with a damp towel
and let it rise in a warm place for 60 minutes
or until doubled in size.5. Bake: Preheat oven to 375°F (190°C). Bake
for 50-60 minutes. The loaf is done when it is
golden brown, sounds hollow when tapped,
and has pulled away slightly from the sides.6. Cool: Allow the bread to cool completely in
the tin before slicing, otherwise, the center
will be gummy.Notes: As this recipe contains no gums or
psyllium, the tapioca starch acting as the binder requires a full cool-down to set the
Structure.I cooked in my air fryer oven 185 • c on bake, and completely cool down in tin for 2 hours before removing and slicing.
I’m moving soon, and packed my loaf tins, as didn’t expect to have the spoons to try a new recipe before the move. I used a smallish Pyrex this time, but will use the loaf time next time.

Finally made a #glutenFreeBaking #bread loaf that I like! Added wet ingredients, then dry into the breadmaker for 15min knead, 40min rest, 55min bake. Measurements are Australian.
Wet
* 450 mL oat milk, warmed slightly (microwave for 30 seconds)
* 3 large eggs, room temperature, whisked lightly
* 2 tablespoons vegetable oil
* 1½ teaspoons cider vinegar

Dry
* 270 g plain gluten-free flour
* 90 g teff flour
* 90 g buckwheat flour
* 45 g cooked and cooled quinoa
* 1½ teaspoons salt
* 1½ tablespoons white sugar
* 2 teaspoons xanthan gum
* 3 teaspoons dry chia seeds
* 2 teaspoons instant dried yeastMy next goal is to reduce or replace the xanthan gum. I’ve tried a chia seed gel before and it did not work out.

Made melomakarona, Greek Christmas cookies, yesterday to take to the family dinner -- gluten-free at that! Rather than top with honey I reduced the soaking syrup to honey consistency once at room temp and gently drizzled that over them. ^^

My mom asked me to bake cinnamon rolls for us for Christmas morning, gluten-free so my sister could partake. I'd never made them GF so a first, used GF bread flour. Texture isn't pillowy as I wanted but still good, and the flavor is perfect!

We’re all feeling very emotional today, so made raspberry Bakewell bars. They have a shortbread base, jam and then frangipane, with some jam swirled on the top, and flaked almonds. Gluten free and vegan as always 😊

Gluten-free folks, what 1-to-1 flour blends do you like best for baking? I've been using Bob's Red Mill, as it's widely available and works decently, but it does bake up a little "gummy" in certain applications. I can't do dairy, so anything with milk-based ingredients is a no-go, but I'd love to know what people are getting good results with!

Two different takes on the idea of a strawberry-frosted lemon bar -- "strawberry lemonade bars".
The first is from King Arthur. The bars ended up oily and overly flexible -- probably from using flax eggs instead of real egg. Maybe psyllium husk would've been better here. But it's all dairy-free using plant butter, and the result is tasty, even if oily.
The second are vegan lemon brownies (vegan to avoid dairy for allergies, and expensive eggs) with a strawberry marshmallow fluff frosting. The first batch was gross as far as brownies -- leave out the lemon extract -- but the second small batch was great! The fluff didn't fluff up right, but it set well and was still delicious.
Lots of things learned. Was fun though! Even if I was disappointed at the time.

Tried a new gluten free vegan brownie recipe (soya and and xanthan gum free too) from little blog of vegan.
They turned out pretty good, got the thumbs up from the gluten eaters.
