I've been making kefir for a few weeks. It did not really 'work' until I switched from using UHT goat milk to regular pasteurized cow milk. UHT alters milk proteins and this can cause problems with fermentation. I'm currently getting good results mixing UHT goat and lowfat cow milk at around 1:3 .
I also recently tried doing a 2nd ferment with lemon peel. I juice the lemons and save the peel by freezing. After sifting out the kefir grains I add in the frozen peel of half a lemon and let it ferment for another 12 hours.
With that amount of peel, there is a bit of a bitter undertone - but I like the lemon flavor and overall quality of the kefir.
My sinuses seem to open up immediately when I drink it.
I also noticed something interesting when I drank some while eating a radish. This batch of radishes was extremely spicy, but there seemed to be no heat at all when I ate the radish and lemon kefir together.
Lemon contains eriodictyol, a bitter flavonoid, that antagonizes TRPV1 -

Jeg har den siste måneden laget hjemmelaget kefir. Utrolig lett prosess (enklere enn surdeig hvertfall) og veldig gøy. Har sannsynligvis aldri hatt bedre mageflora enn nå, ettersom jeg drikker ~500ml kefir om dagen nå.
Det eneste problemet er at jeg begynner å få litt for mye kefirkorn, hvis noen i #Tromsø ønsker å prøve kan dere få kefirkorn av meg.

Les grains de kéfir contiennent des #probiotiques et permettent de se préparer des boissons très agréables à boire. Excellent pour la #sante, boire de l'eau de kéfir est fort intéressant en ce temps automnale avec le retour du #Covid et d'autres #virus. En ce début de semaine, un rhume n'a duré que 2 j. alors que d'habitude j'en ai pour 10 j. Je pense que j'ai de meilleures #défenses #immunitaires grâce au kéfir.

Good morning tooters. A warm night again & 12c when I got up. Lots of low cloud & morning fog today, we also finally got a bit of rain overnight. Enough to make the ground very wet which is good. It’s going to get to a pleasant 18c but I doubt there will be any sun appearing.
As soon as I got up I had jobs to do. Now that it’s colder it takes a lot longer for my kefir to ferment & that was ready to be decanted & re-fed. My feijoas had finished dehydrating & I removed all of them & put them into a container - natures lollies. Then I got everything ready for the next lot which I’ll prepare after my shower. They are much tastier without the skin so it was worth the effort. I wonder if I could make feijoa gin 😃 - something to look into for next year maybe!
I did my yoga class in my lounge room yesterday rather than the spare bedroom. I can chrome cast it to my old tv, something I’ve only just discovered. There is actually a little less room in the lounge to allow some of the movement so while I found it worked reasonably well the only real bonus was having the larger screen. Back to the spare bedroom 😁.

Mein #Kombucha ist fertig. Ich habe blöderweise vergessen rechtzeitig neuen Tee anzusetzen. Das habe ich jetzt nachgeholt. Morgen wird ein neuer angesetzt.
Und einen neuen #Kefir habe ich auch gerade angesetzt. Den letzten trinke ich gerade.
Und weil ich schon dabei war auch gleich nochmal neuen #Joghurt angesetzt. 😋 -
