  1. Kielbasa Sandwich: A Pennsylvania Delicacy

    For those unfamiliar with Pennsylvania, we have a wide variety of delicious foods that are native to many areas of the world and fused with American style. This is an example of a Polish kielbasa grilled, put in a good hard roll, and topped with sauerkraut that's been fried with peppers and onions. It's one of the best hot sandwiches I've had in a long time. This masterpiece was made by Dymski Pierogies.

  7. Heute beim Abspülen kurz aus der Hand gerutscht und prompt in vier Teile gebrochen. 😞

    Es sind saubere Bruchkanten, das könnte ich kleben. Ist nur die Frage, ob der Deckel für den Gärtopf dann noch dicht genug ist für Sauerkraut machen.

    The nori, actually the "kim", sounds like an excellent addition. I haven't been eating my #kimchi as often, so the flavours have really developed. I also have a fair amount of #sauerkraut to enjoy. My ginger beer has carbonated now, and it is excellent! Even though I don't typically drink sweetened beverages, a shotglass/day seems like an excellent idea.

  11. @AmeliasBrain Haha, lovely poem! The newer Classico bottles are far more reusable than other brands, but I don't eat pasta that often these days, so I haven't been accumulating the bottles. I'm really happy to keep nearly everything in my pantry in glass, especially since a Christmas visit from a mouse!
    As well, I do regular #fermentation, and I often give away jars of #kimchi and #sauerkraut. The jars don't generally come back to me. One jar did, filled with dried pasta, which I appreciated. In the summer, I like to preserve some jam if berries come my way. These jars will certainly get used by me, and they aren't all that cheap to buy.

  17. Finishing my small batch of homemade #sauerkraut to make fridge space for my share of the communally made stuff I’ll pick up tomorrow.

    Making it was a fun afternoon mid December, with a production line of cabbage choppers (machine mostly, some by hand) and spicing/salting and finally pressing it in 3 50 litre barrels…

    Very positive criticism from our co-farmers so far, and this mash was also very tasty

    I make my yogurt every week, and every couple of months, I make batches of #sauerkraut, #Kimchi, and other fermented veggies, this time, jalapeños.
    I gave away a lot for Christmas, so I refurbished my supply over the weekend. I'm also registered for a class to make fermented ginger sodas. The driving conditions were unsafe that day, so I'll take the class at the end of the month, instead.
    Our local library has a teaching kitchen, so I've taken several classes recently, including making Indian flatbreads/rotis and kala chana masala. I still need to find a smaller bag of atta flour to try to make rotis at home. When I went to the Indian grocery, I came home with corn atta, instead of wheat!
    Anyway, there's an endless list of things to learn, and I'm enjoying the process.

  19. We're going to have a couple of very frosty weeks for the holidays here, but I'm managing to bundle up adequately to walk to a variety of neighbourhood events and activities. I'm enjoying the pace. Lots of time for #kdrama, #AmReading, and various kitchen and household tasks. My balcony freezer has preserved my Big Bird, which I've transferred into the fridge to be cooked on Wednesday. I'll pick up the necessary additional items tomorrow, in order to prepare an appropriately festive meal. I jarred my #kimchi and #sauerkraut today to distribute to folks at my language group, as well as family members. My grandkid's tap performance tonight is probably the last time I'll see my kids this year. Hopefully, I'll have an outing with the grands one day next week. Another empty nester has invited me to order Chinese on Christmas Day.
    I stopped at a neighbourhood bar on my way home for some wings and a chili lager. That was good!

    I started #fermentation with yogurt, and then #kimchi, and now, I am making #sauerkraut regularly. Today, I'll pack up small jars to share with folks at my language group. It's all very delicious, as well as having excellent benefits for gut health. I have added mustard seed to my last couple of batches of sauerkraut, and I'm delighted with the results. On the weekend after New Year's, I've registered for a class to ferment a natural ginger soda. I'm told that it's a very easy process, but I haven't yet tried it on my own. The instructor does ferments as his full-time occupation, so that's reassuring.
    None of the ferments are very complicated, although my kimchi has multiple ingredients. Still, it just involves having a messy kitchen for an hour or so, and then it provides weeks of enjoyment (1 week, in the case of the yogurt).

  21. It's mid-December, and perfect winter weather where I live to make cabbage rolls! The photos show the progression of the dish as it's readied for baking. The sauerkraut on top is from a batch I made several weeks ago and has slices of apple in addition to the cabbage. The red "sauce” in the third photo is just regular tomato juice.

    I got the recipe from my mum years ago, writing it out as she took me through the steps of making my first batch. Our then-young sons helped that day too!

    She’s due back this evening, so after a couple of days of her eating #sauerkraut & #rollmops I’ll be serving her up some #CornedBeef. 👍

  24. Adventures in the community and in the kitchen this week. Jarred another batch of #sauerkraut, which has rapidly become a favourite condiment. I took a delightful class to make fish tacos with freshly-made corn tortillas at the Milner Library.
    Yesterday's trip to the #LocalBikeShop was made under brilliant blue skies. Today was very foggy and frosty weather, with frazil pans getting larger on the river.
