CW: lung-esophagus axis? sauerkraut is magic?
I've been having symptoms consistent with eosinophilic esophagitis FIRE syndrome for some time. There are foods that seem to trigger a reaction only sometimes; the threshold for reactivity seems to move up and down. Exposure to lung irritants seems to be a key factor in moving the threshold downwards.
I worked outside in a public garden today for a couple of hours without a mask, not realizing the air quality was poor. I recently had success eating foods that I sometimes react to with sauerkraut (I have no idea what's going on there), including rice - a food I had 'lost' and then regained, then lost again. I tried the rice with sauerkraut thing and was disappointed to find that today I had to eat *a lot* of sauerkraut to swallow it without too much pain.
I decided to sit outside on the patio after, but only for a few minutes as I looked over at our air monitor and found it was yellow-orange - then I realized I had been breathing bad air for a while today. It only just now started to smell like smoke.

I'm wondering if/how this would affect eosinophilic esophagitis, since sucralose/Splenda is used to make a slurry with topical steroid for treatment. Patients are told to use as much as 20 packets of Splenda, though most only use 2 and some use honey or applesauce instead:

Throat swelling when I encounter a trigger is getting old now 😞 Things that I could tolerate in small amounts no longer exist.
Also, I’m starting to hate the texture of broccoli and cauliflower. I’m ok with the stalks, but the florets are making me feel 🥴 I guessing because that’s most of my diet, that I have to eat.

Anyone have a brand / product recommendation for a hypoallergenic amino-acid based meal replacer?
I'm having problems with dysphagia and it is triggered by most things with a lot of protein in it (fish, poultry, legumes, eggs, etc.). I've had an upper endoscopy and they did not find evidence of eosinophilic esophagitis, but products suitable for EoE would likely work well.
I get so hungry if I don't get a high protein meal a few times a week.

comment: I & many others with MCAS have dysphagia. If eosinophils are at the party, it is usually b/c mast cells invited them. Also, MCAS affects women more.
- they usually take more than 5 biopsy samples when trying to diagnose EoE [16:10]
- EoE is IgG4 mediated [44:26]
- EoE associated with high socioeconomic status; Dr McGowan suspects this is due to underdiagnosis in ppl w/ less access to care.
comment: it would be interesting to know of EoE is associated with high PFAS burden, which is higher in ppl w/ higher income. PFAS have surfactant properties, like SDS. Also, there's increasing use of powerful surfactants in herbicides due to development of herbicide resistance.
