    There are recipes that make me tear up a bit when I cook them. This is one of them. I can remember my Aunt Mia proudly serving this so often, and how my mother and I used to make it every Easter. It makes a wonderful cake for a lamb cake. This year, I made a ring cake because I couldn’t find the lamb molds for some reason. I also made several loaf pans worth, and made a huge cross shaped cake on a table which I served at our post-Easter Vigil Mass reception. There wasn’t a crumb left!

    Description

    This is my go-to poundcake recipe. My dear Aunt Mia was a wonderful cook, and an amazing baker, among just being an amazing mother, aunt, and woman. I love this recipe because it includes sour cream, which adds moisture and a bit of tang, and makes for a creamier texture than most other pound cakes out there.

    Ingredients

    Scale1x2x3x
    • 1 cup butter, softened
    • 2 3/4 cups sugar
    • 6 eggs
    • 3 cups flour, sifted
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1 cup sour cream
    • 1 teaspoon vanilla extract

    Cook ModePrevent your screen from going dark

    Instructions

    Cream butter and sugar until light, add eggs one at a time, beating thoroughly after each one. Sift dry ingredients 3 times and add alternately with sour cream to the first mixture, beating until smooth. Add vanilla. Pour into 9″ tube pan (greased and floured). Bake at 350° for one hour and 20 minutes, or until done. Let stand in pan 5 minutes before unmolding.

  8. Got a burst of "gotta bake" energy so now there's a blueberry pound cake in a bundt pan in the oven. We'll see in an hour or so how it comes out.

  10. #Dutch #Boerencake #poundCake #recipe:
    Mix 250gr of #butter (I cubed mine before using a handmixer) with 250gr plain white #sugar and #vanilla (I probably added about 2 heaped teaspoons of vanilla sugar) till the butter turns kinda white and smooth-ish.

    Mix 4 #eggs in, one at a time.

    Mix in 250gr of plain white #flour and about a teaspoon of #bakingPowder till smooth.

    Mix in 60ml of milk.

    Line a breadtin with baking paper and/or butter and add the mixture.

    Put in 160°C oven for ±45 minutes.

  11. While I don't expect (m)any visitors, I still made a #cake, as it's my #birthday and imho a birthday needs some kind of cake or pie. ;)

    Usually I bake an apple pie, but I didn't get the opportunity to buy and prepare plenty of apples in time. Maybe I'll make one next week or so. :)

    Okay, #vanilla #boerencake ¹ is out of the oven. :)

    Once it has cooled, I'll take some more proper photos of it.

    ¹ (#farmersCake, but really, it's just a regular #poundCake made with proper real butter and maybe an extra egg)
