  1. Da bin ich mal gespannt: weil ich vom #Spanakopita backen noch eine ganze Menge Filo-Teig übrig hatte, habe ich den nun kurzerhand zu einem #Apfelstrudel verarbeitet. Essbar wird es sicher sein, aber ob es auch gut schmeckt? Naja, zur Not wird das Experiment dann halt in der Vanillesauce ertränkt 😅

  2. CW: Today... 2026 March 17 ... Food... Groceries... Attempt to rest...

    Well, um yeah that rest thing. How does one do it? I got up early, as I wasn't sleeping. As I was trying to find a bit of just trying to get my "tea" (basically hot water most days) at least started before people tried to interact, I don't think I even had the kettle on and was dealing with other folk.

    That said, I got food in the morning, I got some water out to the birbs. It was warm today (I didn't really notice, as I wasn't out other than briefly, and it was warm enough, but it got a good deal warmer).

    Snow's been melting, but I'm not sure how much. It's probably down to about 1/4 what we got overnight the other night in the places that it's still hanging about.

    I did just kind of crash on my bed after a bit. It was worth it, though very strange just like not properly in bed... Just flopped on the bed, which wasn't really in a state to be flopped on.

    Did have a sauna today. That was good.

    Groceries were got. I don't really remember what was got. It was fair, but kind of annoying putting stuff around when mum's saying "we don't want that..." and it's like. "who's this we who doesn't do any (or more than about once a week) of the cooking?"

    I know, I'm kind of grumpy, but maybe I have a right to be? Do we have spinach? I wonder... That might be something to look into, see if I can make some sort of spinach thing with the filo (not sure if it's
    #spanakopita #σπανακόπιτα, but sort of). I don't know how to enter Greek. At least not easily.

    Managed food today. Decently. Loads of dishes to deal with. I probably don't have enough room in the dishwasher for the dishes, and that's OK.

  3. On the 27th I’ll be having family over for dinner. So, I’m slowly gearing up with the preparations. Today I prepared these spanakopita triangles, and put them in the freezer. Only baking them will be needed on Thursday 😃

  5. Hortopita (like #spanakopita but with mixed greens) using @ChryssaD's home-made gluten-free filo and filled with chard, beetroot and amaranth leaves. With gigantes plaki (baked broad beans) and salad.
    The #EamonRyan window boxes are providing something almost every day this summer. We have loads of basil all summer and chilis ready to harvest inside our South-facing windows too.

  6. @LifeTimeCooking many years ago, before I understood seasonality, I was at the #PrestonMarkets in Melbourne looking for spinach at the height of summer. Of course there wasn’t any, but one small stall run by an old Greek lady had some similar-looking greens on a low, out-of-the-way shelf. I asked her what they were, and she said, “is Greek vegetable” in a way that meant “you don’t want that.” But I asked her what she called it (“vlita”) and how she cooked it (sautéed with garlic, olive oil and a squeeze of lemon) and figured it sounded like a workable substitute for spinach.

    When I got home and managed to look up the Greek name, I learned it was #amaranth. Then I learned about #horta, the mixed greens that yiayias pick from here and there, and which is commonly used wherever we might use spinach. Anyway, long story short, try amaranth in #spanakopita sometime, mixed with any and every other green, including chard, rocket, lettuce, chicory, dandelion, purslane, kale, nettles, etc etc. Just blanch the whole lot in salted water then squeeze it out and chop it up. You can also freeze it at this stage (I use silicone muffin pans to make 1/2 cup “hockey pucks” then store long-term in a freezer bag.) Finely chopped horta also makes excellent green rice (spanakorizo). #food #EatYourGreens #foraging #gardeningAU
