My parents were both from Gilan province of Iran (my father was half Azeri) and our food was mostly from the north.
The food culture in northern Iran is almost entirely red-meat free. Chicken, eggs, fish, vegetables and beans are all they use to make some of the most delicious food in Iran (IMO).
