  1. The meat from that turkey fed a friend of mine and me for a week. I had enough leftover meat to make little pot pies for myself. If I ate chopped liver, I would have made chopped liver but I used the drippings to make gravy. And the fat from the drippings to roast potatoes. And I cooked that turkey carcass for 22 hours and made stock. Then I used that stock to make #borscht and #avgolemono . And the neck, back, and wings are going to be used to make a year’s worth of demiglace. #foodporn #food

  2. ARCHIVAL from 27 Dec. 2028: Humble post-holiday meal made with the extra #pasta shells, filled with a #tuna mousse (or ”spuma di tonno” in the Italian), and cooked in a lemony #avgolemono type sauce, seeded with grated parmigiano and topped with breadcrumbs.
