* easy meals - porridge for breakfast, curry and rice from leftovers for lunch
* Managed a short walk well wrapped up and back home before I got too cold (it's a wimdy day). Rewarded myself with tea & a mince pie
* A friend called to update me on how they're doing (they may have COVID and are feeling pretty rough). I told them they're doing the right thing by resting up, drinking plenty fluids and taking their strepsil cough sweets

This year's favourite #MincePie so far. They're even better than the frangipane ones which I usually honour with this important award.
Sweet but not too sugary, the right pastry:filling ratio, fruity, and... Cognac! 😁

First #MincePies of the year. As always, they turned out delicious.
The pastry recipe calls for ground almonds. Since almonds are an environmental disaster, I replaced them with cashews, which I ground myself with a pestle and mortar. Result is really good.

Here's a tip to help you through the festive period... Mince Pie Manhattans.
Steep some mincemeat in Bourbon for a few days. Then filter it through something (being sure not to discard the mincemeat), then make the manhattan as usual:
40ml steeped bourbon
20ml sweet vermouth
dash of angostura bitters
twist of orange (maybe zest the rim of the glass too).Serve in a martini glass.
Use the steeped mincemeat to make mince pies. Trust me. You will want to do this

Just saw this in a branch of Sainsbury's, one of the big supermarket chains in the UK.
Mince pies are traditionally scoffed at Christmas... expect these expire nearly two months before Christmas!
