Kobiraji Cutlet - one of Kolkata’s most iconic snacks! Born during the British colonial era, its name comes from “coverage cutlet,” referring to the signature crispy egg net covering a juicy fish, chicken, or mutton cutlet inside. A delicious blend of British cutlet style and Bengali culinary magic, best served with mustard and nostalgia.

Künefe was being devoured in India as I casually scrolled through my Turkey memories… and then almost on cue - a sudden hiccup. There it was: my very first künefe moment, captured in a little restaurant by the Sea of Marmara, Istanbul.

More of these unexpected journeys and moments are in my book - "From the Reluctant Homebody to the Unanticipated Globetrotter"...

Many who were once rich have become poor; that house belongs to them. Day by day, it bears the scratches of hard times. Sand falls from the walls, sparrows dig the broken floor with their claws and flap their wings in the dust, and in the Chandimandap, pigeons gather like the scattered clouds of a storm.

Today, as we celebrate sparrows, they’re struggling due to habitat loss, food shortages, climate change, urbanization, pesticides, and pollution. To help, we can plant native plants, reduce pesticides, and create safe nesting spots.
