    Not that I haven't had a daiquiri for long but I usually make one with syrup - this way with powdered sugar in lime juice is a variant I haven't tried in a while. Sugar is powdered now, I will have more!

    For some reason the egg whites never stay very stiff in these.
    Is it because the 80 proof Cointreau and a properly high proof London dry gin (like Tanqueray) make for an ABV that the proteins in the egg white just can’t stand up to?🤷‍♂️
    Even with less than perfect texture it’s still a delicious drink.

  6. It’s great to see more advocacy for proper #Daiquiri construction with granulated sugar. Personally I always keep a blend of super fine (white) sugar and Demerara sugar (that I’ve Vitamixed to the same superfine consistency) on hand for Daiquiris. Dissolves much more quickly.

  16. Started with a quick #MaiTai (Plantation Xaymaca & P.F. Dry Curaçao) after a lot of mis en place prep for Phat Si Ew from the Pok Pok cookbook.
    Nearly blew my head off with a little extra Phrik Phon Khua (toasted chili flake) freshly made, and way hotter than the old batch.
    Followed dinner with a Buccaneer’s Buoy from the PDT app.

  22. @SazeracLA my favorite substitutions with Stiggins Fancy are a #Sazerac, an #ElPresidente, or half the base of a #Sidecar. Or really any drink. Put some Stiggins in there and it will be better!
