Mendes uses freshly-cured cod in this recipe (traditional is dried); it brings great flavour but I also always just find the process amazing.

Euros Euros Euros!
Bringing back Cook the Cup for it! Over the course of the tournament Graham and I will cook, bake or mix something from each of the 24 nations playing in the Euros.
To make the ordering a little simpler, I’m gonna start tonight with the hosts, then the three play-off winners, and then work backwards via the rankings for the final draw pots - at least until we’re out of the groups.
Can’t wait for kick-off (i.e. dinner) later ⚽

We did it! Back at the start of #WWC23 @GrahamCampbell and I decided to cook, mix or bake something from every nation playing in the World Cup.
We got interrupted for health reasons but picked it up again recently, and I'm so pleased we've managed to finish it!
It's been brilliant trying all these dishes, we've definitely found some new favourites.
