A series of mouse experiments found that ingesting olive oil before glucose reduced the blood sugar spike resuting from glucose ingestion, led to earlier release of several hormones that regulate blood sugar, and slowed gastric emptying. These effects were seen in normal mice and those with type 2 diabetes.
