Cocoa sounds like a good addition - chili peppers and cocoa / unsweetened chocolate are a traditional pairing in much of native Latin American cuisine. I'll have to try it! Thanks for the suggestion.
I like cooking the tomatoes. I don't know if it's actually caramelizing them, or if it's #Maillard reactions short of caramelization, or something else, but it definitely enriches the flavour, makes it more complex.

This is a nice discovery at Chinese grocery spots, that you can often find cuts in shape and sizes you don't find at the regular supermarket chains. Label just said "beef" so no help, but I'm guessing a blade roast sort of thing.
We don't buy beef very often, so it's nice to have something interesting when we do.

Sometimes the lentils stick to the bottom of the soup machine and get burnt and that makes the soup taste… better? #maillard
Probably a health hazard since this machine is supposed to be non-stick, or was, when I first got it. For my basic no frills recipe I like to put in lentils (that’s what makes the soup creamy), a broccoli and an onion (or half if the ingredients are already reaching the “line”), and spices. Today I made it hot AF with fresh green pepper, not bellpeppers. The long and pointy kind.
