I made some Tepache today with the left over rind and core of a pineapple we cut up and ate last weekend. In addition to the pineapple rind, I added: 1 cinnamon stick, a dash or two of cayenne powder, 1/2 cup brown sugar and then topped the gallon jar with filtered water and put an airlock on it.
Wild yeast and bacteria from the rind will ferment this over the next couple of days.

Found panela in the supermarket! I genuinely have no idea what to use it for so I searched around and decided to try to make some #tepache (fermented pineapple drink). Hope it turns out tasty!

I've made #tepache a couple of times after I heard of it on a YouTube channel last year. It's pretty tasty.
I've only used the rind before, but for the batch I set today, I also used some of the meat. It was a bit too ripe to just eat, but hopefully it'll work in the tepache.

I was thinking of maybe dumping this out today and trying to split it up between a few containers, but I always worry the proportions won't be right anymore for the whole batch if I do that...I'd have to strain the liquid from the solids, separate them by mass for each of the containers, then add proportional amounts of water. 😞

last night I tried making #tepache for the first time. I used a half-gallon mason jar and I don't think that was enough space. The recipe was
- 1 cup brown sugar
- enough tap-hot water to dissolve the sugar
- ice to cool the water back off
- some ginger with the peel still on
- a cinnamon stick, broken up
- a few whole cloves
- The peel of a pineapple with ¼-½ inch of the fruit attached, chopped up into small pieces
- enough cool water to fill the jar -
