  2. Christmas #experiment is to start a #kimchi.. Have never intentionally #fermented #vegetables before. Recipe from kitchn.com bodged with substitutes. Who knows what "#Korean pepper flakes" or "Napa cabbage" are? Used dried chilli flakes and red cabbage instead. Also added cauliflower because it was there.

    If I'm dead when you see this, kimchi was almost certainly the culprit.

  3. New ferment just dropped. Similar to sauerkraut or kimchi, it’s called curtido, and originates in El Salvador, used as a topping for pupusas. We’ll use it on tacos.

    Red cabbage, carrots, white onion, jalapeños, salt, Mexican oregano.

    It’s my first mash-style ferment, and the mashing went great. Plenty of liquid extracted from the veggies.

    Sodium percentage of daily value (Canada)

    ~30 grams of fermented/pickled things in jars.

    American Asparagus (3 spears) 10%
    Korean Kimchi 15%
    Lebanese Veg 25% (2 pieces)
    German Sauerkraut 28%
    Greek Stuffed Olives (4) 30%

    Curiously the veg salt is super noticeable compared to the others.

  6. My Friday is better now. Just got my big gift jar of homemade #kimchi from my client's sweet daughter 😀 Mom's going to love this too - she loves kimchi! We make our own too but everyone makes a different style.

    This is their longtime #Korean family's style & it's just the right amount of spicy & tangy 👍 Excellent on it's own or as snack toppers or added to soups & other dishes.
    The jar is big enough to last us for a couple of months!

  20. Interesting article on Vitamin K-2.

    It is a vitamin most people do not get. It can prevent the build up of arteriosclerosis, even for people with low cholesterol and a genetic predisposition to arteriosclerosis. It also does a lot to promote bone health and the health of gums.

    There is only 1 vegan source with significant amounts. Natto. Natto is fairly disgusting and brands that are reliably vegan are expensive.

    Good news: you only need about 12 grams a day - about 1 heaping tablespoon. A $5 3.5 ounce container can last you a week.
