When I was in my 20s, I only had a santoku knife, and while I think a santoku knife can be great for precision and it makes it a lot easier to get fine mince with it, the more time I spend with it, the more I really prefer a traditional European chef's knife for everyday use.
Rocking cuts with a chef's knife are much easier than a santoku, which does not rock. This is easier on my hand.
On the other hand, I think the trick is to think of a santoku as a very small clever, making it excellent for thin cuts and chopping.
For ergonomics, for me the chef's knife wins, but so much of it has to do with how you're using it.
