Yay Kid2 is making more of the apple cake! (See 👆🏽)
She decided to not use the mandoline to slice them as before, but use a knife. A bit unsure at first if she should/could (not sure why, I reminded her she does know how to wield a knife, just needs practice), she made short work of the apples.
Unfortunately - she will be going back to the mandoline next time - these were cut too thinly 😅 batter moved up over the too thin pieces so final result/look did not pass her muster -

When I was in my 20s, I only had a santoku knife, and while I think a santoku knife can be great for precision and it makes it a lot easier to get fine mince with it, the more time I spend with it, the more I really prefer a traditional European chef's knife for everyday use.
Rocking cuts with a chef's knife are much easier than a santoku, which does not rock. This is easier on my hand.
On the other hand, I think the trick is to think of a santoku as a very small clever, making it excellent for thin cuts and chopping.
For ergonomics, for me the chef's knife wins, but so much of it has to do with how you're using it.

@andymoose Yep, back of a Chef's flat knife. As advised by Anthony Bourdain in *Kitchen Confidential*. That'll do it.
“Garlic is divine. Misuse of garlic is a crime. Old garlic, burnt garlic, garlic cut too long ago, garlic that has been smashed through one of those abominations, the garlic press, are all disgusting...”

Every Thanksgiving we look forward to gathering around the fire, watching the parade, and playing five finger filet.
