Are the European Elections votes and transfers for Midland-Northwest counted manually?

For some reason, my partner thinks that since there are too many ballots and they are so long, the vote transfers are executed statistically (like on the basis of the preferences of 1,000 randomly chosen ballots). Is that a thing?

If I had 10 candidates on the ballot, and there are 3 of them that I ABSOLUTELY NEVER UNDER ANY CIRCUMSTANCE WANT TO SEE COMING TO POWER, how should I vote?

In my logic, I should assign my votes 1-7 to the candidates I’m okay with, and skip assigning numbers to the 3 "nope" candidates.”
Is that right? So they don’t get any votes from me at all?
