Experiments with zebrafish show that the sweetener sorbitol, if present at concentrations higher than gut microbiota can metabolize, can be converted to fructose and lead to fatty liver disease. Sorbitol can also be produced from glucose in the intestine, so additional dietary sorbitol may exceed the capacity of intestinal microbiota to break it down.
