The pretty and familiar sea-blue bottle is 2019 Santorini from Gavalas, an elegant, Assyrtiko-dominated creature. Ripe but restrained, it's a textured white with a polished feel, tasty and harmonious.
This isn't a big blockbuster style, or meant to be, but it drinks beautifully, not a hair out of place, still able to coat the palate. Years left, but in a good place today.

This lightly oaked Assyrtiko from very old vines is super today. Ripe but perfectly balanced, it's fresh and deep, tastes great, has gorgeous fruit and a lively demeanor to lift the fruit. It's a beauty from ancient, centenarian vines. See pic #2
Age allowed it to blossom while remaining completely youthful. It has pulled in the wood, which seems to provide texture and not get in the way even a little. It is still young; lots of time left!

At 15+, this has evolved beautifully and it's holding great. It's deep and has some power, but most of all, this sports great fruit and a surprising burst of flavor. It's a fine performance, big and ripe (14.2%) with a mouth-coating feel and saline end.
This needed (and sure has benefited from) some age. Who knows how much longer it lasts. It doesn't seem in any imminent danger, but this is a good time to dive in.

Had good luck of late on older Santorini. Gai'a's '08 flagship, just shy of 20 years, is mature & perhaps then some, but enticing with benefits of age
The color's darker & you can taste some oxidation, but there's also chirpy acidity & rich flavors. Tasty! Be happy if you still have this lively Assyrtiko, but drink soon. The flaw--wasn't as good the next day, when age and more oxidation caught up, power took over. 13%, synthetic cork. About $50 these days

This 2012 was just singing. I can sometimes excuse a little oxidation for development and complexity, but there was none at age 13. Fresh and focused, this evolved well and held perfectly. Ripe, but textured and showing fine depth, it's super.
The price of new vintages has ticked up notably, passing $50, but it was a value then.
The 14.5% alcohol level is not unheard of for the brand, but many years are notably less and it varies widely.

Nykteri Reserve '18 (85% Assyrtiko) is in a great place today--developed but young, ripe and fresh. It can hold a lot longer, but it's proving irresistible now. Santo Wines has a restrained Nykteri style--no oxidation here!--but deep & delicious with a firm finish. The balance is good, & the fruit absorbs the wood, mostly fending off the alcohol.
"Reserve" here means fermented in wood, then aged 9 months, not just three.

This eccentric Assyrtiko style is not for the shy. It's orange in color now, but less oxidative than very ripe and deep. There are some more restrained Nikteri (Sigalas uses an alternate spelling) versions on Santorini, but this is a blockbuster, while controlling the oxidation. It's ripe and delicious.
The back label (pic 2) speaks of sugar, but note that this has less than six grams. It is not exactly a dessert wine.

Perfect pairing for many dishes (try white clam sauce). From this bottle, there are good years of life left. Not really a surprise. Assyrtiko can age and this winery makes 'em that way. 14%, $60-ish for new vintages these days.

This Assyrtiko/Athiri blend is mature and maybe then some. If it's a bit oxidized, though, it's also bright and nuanced, leaving me happy to drink it. It's tense on the finish and tasty, but drink up. It would've done even better a few years earlier. The next day it did seem a little more like an orange wine. 😮

Whine or wine? Last night, picked wine. An odd duo for the main event, the Thalassitis 2015 Assyrtiko, with synthetic cork, was super. So youthful, so fresh, restrained and elegant. The Pegau 1998 Reservée opened slowly, but blossomed into pure deliciousness. A little rough around the edges, it could use drinking, but it was no slouch. And a sweet conclusion posted on recently. This 09 Barrel (6 months) is super, aging brilliantly. It seems like 15 years is no problem for this wine, and 20 will likely be no problem. Or more. The light touch with oak is obvious and it is pulled in. Restrained, fresh and bright, it's elegant with no oxidation, and bite on the finish. There are some mature nuances, a good thing.
