  1. I found readymade squares of puff pastry at my local green grocer so the effort level on this pie was just put left over stew in pie dish, roll out the puff pastry and cut into slices, drape over the pie and stick in the oven.

    OK so maybe there was more effort on previous days to make the stew but who doesn’t have quantities of stew in the fridge this time of year? #PieSeason #food

  11. There is a new technique I need to try out today, "blind baking" or pre-baking the pie crust. Because pumpkin pie is basically a rich custard and is both very moist and requires a short bake time, the crust needs to be prebaked. I don't have dedicated pie weights so I'll use some ancient beans from the back of the cubbard. Here are the instructions I'm following, roughly:

  12. After a brief recess, #PieSeason returns, though, in honor of the American Thanksgiving holiday, I am making a pumpkin pie. Don't worry, though, there will be meat pies again soon because in a few days it will be time to make leftover turkey pie.

  13. I’m not going to make a big pie this week, but I have a bunch of left over steak from a dinner out so I might make a hand pie with the leftovers. Last weekend I feel like I overdid it with the cooking so this week I’m taking it easy. I still have many jars of soup and a slice of that pie.

    And by taking it easy I mean I put 3.4 lbs of pork shoulder in the slow cooker for pulled pork. It’s slow but the active effort is low.

  14. I had taken @samantha ’s advice and put the pie dish on a metal baking sheet which I think helped to keep the bottom crust from getting soggy and the pie bird kept the top from getting soggy, despite the accidentally extended bake time.

  15. After a break for Halloween, #PieSeason is back. As the third pie, I am making a chicken pie, this time with both a top and bottom crust. The recipe says it feeds 8, so there will quite literally be pie for days.

  16. The second pie of #PieSeason was a lot more labor-intensive, not just because of the crust but also because cooking the beef and onion filling took several hours. In retrospect, I should have browned the meat and then shoved the lot into a slow cooker.

    The pie bird does seem to have worked at keeping the crust from getting soggy.

  17. I have not grown up with savory pies, so for me they are a series of tasty experiments. However, Mr Dys is English and grew up eating them. So as an additional constraint, I’m choosing traditional pies and sticking to the recipes to create a homey feeling. He was perfectly happy with the cottage pie and suggested I just make it again if I want to continue #PieSeason but I decided to try a new (but also traditional) recipe.

  18. This week, I continue #PieSeason with a steak and onion pie. I’m upping the challenge level as this pie requires a pastry top, however not yet a pastry bottom.

    Last week, I forgot to take a photo of the cottage pie before we ate it all, so this week I’ll try to remember.

    So I just want to alert you all that #PieSeason starts tomorrow. And when I say Pie Season, I mostly mean savory pies.

    My first pie of pie season will be cottage pie. Starting off easy without the pressure of a crust. This recipe seems like a good place to start
