The pomegranate is a small detail, but it cuts through the richness beautifully and makes the plate feel brighter and more seasonal.

Breakfast at Ladurée in Paris felt like a small occasion: an egg-white omelette with baby spinach, fruit salad, bread and pastries, excellent French butter, and coffee served on beautiful china.
Nothing was especially complicated. The pleasure was in the quality, the setting and those little details that make a meal memorable.

A tin of sardines in olive oil, crusty bread and butter sounds more like something pulled together at home than a restaurant dish.
Yet at a traditional French restaurant in Paris, it made complete sense. The sardines were rich, the bread had a proper crust, and the butter was delicious. Together, they turned the whole thing into something surprisingly satisfying.
It’s a good reminder that simplicity only works when the ingredients can carry it.
