I forgot to test my frozen panzerotti experiment yesterday. This morning I popped it in the fridge to thaw partially. I think gently heating it in the toaster oven at 250°F for 30 minutes will be a reasonable starting point.

Panzerotti is cooled down, vacuum sealed, and ready for freezing. I'm hoping it's a worthwhile alternative to a Hot Pocket.

The Cheesesteak panzerotti turned out pretty awesome for the first attempt. This is absolutely worth perfecting. A deep dish pizza version is also a possibility. I'll be trying to grow a variety of colored peppers next year.

Today, I'm getting ready to work on a Cheesesteak inspired panzerotti experiment: chopped eye round, bell pepper, onion, mushroom, mozzarella, and Alfredo sauce.

Tonight's panzerotti experiment leads me to believe I can attempt making them in large batches, par-fry, individually vacuum seal, and freeze like better versions of Hot Pockets.
I think I'll wait until next year to begin testing because I'm all pizza'd out

This afternoon's panzerotti attempt looked kinda like the shape of a human heart. I'm not skilled enough to do it on purpose. Day 6 of the experimental dough: it's still usable, and I still have enough for one last experiment tonight. My production method improved after seeking guidance from YouTube videos.

Tonight's panzerotti attempt had minor problems: too thin in spots where holes were formed on its underside, and was overall misshapen.
My experimental dough is on Day 4 and still has some spring left in it. The oil temp was controlled much better this time, and the insides were thoroughly heated. Taste is not an issue.
My crafting technique must improve; the seam was sloppy this time. Practice makes perfect.

I had a serious breakthrough in the kitchen today. My failed pizza waffle dough experiment actually works pretty well in panzerotti. The higher hydration leads to better texture when deep fried. The dough is difficult to work with. Perhaps I could work with chilled dough and partially freeze before frying. There was a minor issue with my oil temp resulting in an overdone appearance in the test, but I believe I'm headed on the right path.
