  1. I just got three copies of my little book on making tempeh at home, and I'm pleased that they are a reasonable size (118 pages). I was afraid they might be more like a pamphlet, but they turned out well.

    I was interested to see that someone in Italy bought a copy.

    No reviews yet, but they will come in time. I hope.

    Interesting, and makes sense about fat content. Perhaps you might try a peanut tempeh sometime. I've made black-eyed pea and peanut (leisureguy.wordpress.com/2022/) and chickpea-peanut (leisureguy.wordpress.com/2021/).

    No grain in those, but still quite good.

  6. @LifeTimeCooking I have not used banana leaves — not available — but they are the traditional wrapper and should definitely work.

    The Ziploc bags I use are 26.8cm x 27.3cm, and I use 3 cups (measured before cooking) of a combination of beans and grain (cooked separately). The bags will even take 4 cups, but 3 cups turns out to be a good batch size for me.

  7. @LifeTimeCooking The US once, but now for six years in Victoria BC.

    I made quite a few mistakes along the way, but now whipping up a batch of tempeh is a cinch, and it is always good. Because I follow Greger's Daily Dozen, I like to make it using a 50/50 mix of beans (or lentils) and (intact whole) grain — e.g., chana dal and (unpolished) barnyard millet, or (also very good) chana dal and Kamut®.

  8. New batch of tempeh starting today. (A batch usually takes 72 hours to be ready to harvest.) I'm going with intact whole-grain Kamut® (organic khorasan wheat) and Du Puy lentils, 1.5 cups each, measured before cooking and cooked separately.
