I just got three copies of my little book on making tempeh at home, and I'm pleased that they are a reasonable size (118 pages). I was afraid they might be more like a pamphlet, but they turned out well.
I was interested to see that someone in Italy bought a copy.
No reviews yet, but they will come in time. I hope.

I think it's likely that you are not asking me the question, since I specify the answer in https://leisureguy.wordpress.com/2021/05/27/tempeh-incubator-4/
But: I use a VIVOSUN 10"x 20.75" Seedling Heat Mat and Digital Thermostat Combo Set: https://www.amazon.com/VIVOSUN-Seedling-Digital-Thermostat-Standard/dp/B016MKY7C8/ref=sr_1_6
I use a raised rack so the tempeh batch does not sit directly on the heating mat but is raised above it — like this: https://www.amazon.com/Tebery-Stainless-Stackable-Cooling-Grilling/dp/B07X7WB831/ref=sr_1_6

Interesting, and makes sense about fat content. Perhaps you might try a peanut tempeh sometime. I've made black-eyed pea and peanut (https://leisureguy.wordpress.com/2022/04/18/two-legume/) and chickpea-peanut (https://leisureguy.wordpress.com/2021/06/20/chickpea-peanut/).
No grain in those, but still quite good.

I've had good luck with unpolished millets (with beans): kodo, barnyard, foxtail, and others. I was led to them by this video:

Here are my Kamut tempehs. Some batches have a few posts, showing stages of development. These are in descending chronological order.

@LifeTimeCooking I have not used banana leaves — not available — but they are the traditional wrapper and should definitely work.
The Ziploc bags I use are 26.8cm x 27.3cm, and I use 3 cups (measured before cooking) of a combination of beans and grain (cooked separately). The bags will even take 4 cups, but 3 cups turns out to be a good batch size for me.

My homemade tempeh incubator made a big difference for me:

@LifeTimeCooking The US once, but now for six years in Victoria BC.
I made quite a few mistakes along the way, but now whipping up a batch of tempeh is a cinch, and it is always good. Because I follow Greger's Daily Dozen, I like to make it using a 50/50 mix of beans (or lentils) and (intact whole) grain — e.g., chana dal and (unpolished) barnyard millet, or (also very good) chana dal and Kamut®.
This describes in detail how I do it: https://leisureguy.wordpress.com/2021/06/08/homemade-tempeh/

New batch of #tempeh goes into the incubator: Du Puy lentils and Kamut® wheat.

New batch of tempeh starting today. (A batch usually takes 72 hours to be ready to harvest.) I'm going with intact whole-grain Kamut® (organic khorasan wheat) and Du Puy lentils, 1.5 cups each, measured before cooking and cooked separately.
It's to try out a sample of tempeh starter I got from Top Cultures: https://www.topcultures.com
