Fascinating look at history of #Carbonara for #CarbonaraDay:
While there was some historical data showing the use of of eggs, cheese & pork fat as a #pasta sauce, the author suggests the WWII US military hypothesis is valid, and even shows how Italians originally (gasp!) used cream. The modern Roman dish, in fact, may only trace to the 1990s.

And the #kosher version is even more delicious: leave out the cheese and instead of pork, use pastrami!
And no, that is not a deviation from tradition - the city of #Rome has had a vibrant #hebrew community for much, much, muuuch longer than #pasta #carbonara even exists... ;-)
