Maple trees are usually tapped between mid-February to mid-March, when temperatures typically reach above zero during the day and below freezing at night, however, this year, the tapping started at the end of January due to warm weather. It is a Canadian tradition, and we have the best syrup!!

It is soon that special time of year when the sap runs in the Maple Trees and we look forward to fresh Maple Syrup. A Canadian tradition is the making of Maple Syrup in March and in the traditional way it requires you to bore a hole in the trunk of a Maple Tree and collect the exuded sap in covered pails.
