  3. Ichimonjiya Wasuke (一文字屋和輔), affectionately known as 'Ichiwa' (一和), is by far the older of the two chaya.

It was established shortly after the founding of Imamiya-jinja, and for over one thousand years has been catering to the shrine gods and visiting pilgrims.

  4. If you were dropped into a teahouse at a random time of year, without access to the garden or any idea of the temperature outside, then the sweets served are your best bet for narrowing down the date...

  5. 🌩️SPRING STORMS🌱

Toraya's (とらや) 'shunrai' (春雷 'spring thunder') can be imagined one of two ways...

⚡️A parched and cracked earth waiting for the first spring storms to bring the rain.
    ...or...
🌧️A spring-tinged ground cracking open with the first signs of new life🙌

  6. 😋SWEETS🍡

From mid-April 'Iwane-tsutsuji' (岩根つつじ 'azalea rooted amongst rocks') is served in the tearoom.
These sweets either mimic small round bushes, or flowers growing out of rock crevices.

  7. Alféloa, 'a sweet of sugar/molasses', was the first hard candy imported to Japan.

Japanese aruheitō' (有平糖) reached its golden age in the Edo period.

The Ueno fruit store Kanazawa Tango (金沢丹後) were so skilled that people could not tell sugar butterflies from the real thing.

As we wait impatiently for snow, Oimatsu's (老松) 'kazahana' (風花) brings festive cheer to the tearoom. The sweet imagines snowflakes sparkling as they fall.

  9. An apple a day...🍎😋🩺

Toraya's (とらや) 'apple' (林檎形) has a history that dates back to 1840!

  10. Of the many 'sea bream' kigata on display, one was created by Horikyūraidō (掘九来堂) for use in a movie called Onna-no-saka (女の坂).

About the size of a newborn, such large sweets were intended as a display of wealth and would be cut up into slices of sugary sashimi for guests!

  11. As the bigger sweets were intended for display they typically featured auspicious motifs, such as cranes, pines and turtles.

When finished the 'sculptures' were often coloured with edible paint to enhance the designs🎨🖌️

  12. The most common type of higashi use wooden moulds called 'kigata' (木型) to create intricate designs in sugar.

Kigata were used to make both smaller, affordable sweets for tea ceremony, and larger, often prohibitively expensive, creations for special celebrations🙌
