My husband made a pot pie today and it came out perfect! Of course he had to ruin it a little by calling it "baked soup" just to troll me. 😝
We also bought a bottle of mead, but when I then referred to that as "bee soup", I was the weird one all of a sudden. I think I won this round 😂

Dinner: Smashed potatoes, baked with butter glaze, rosemary, srirachra, sea salt and sesame. Salad with honey-mustard dressing and Ragout Fin - baked with cheese on top. Don't know why we had this, some sort of nostalgia? The store bought ragout was... edible (there was cheese on top!), but should I ever have a craving for this dish again, I will cook it myself. 😅
Anyway - I wish you a good start into the new week. You know the spiel: Stay antifascist. Trans women are women.

#Chestnut and #Mushroom #PotPie with #porcini and field mushrooms, as well as diced carrots and onion, plus minced garlic, roux, tomato paste, chopped rosemary and parsley. It’s set in a ramekin with a whole wheat crust.
Though seemingly just a veggie pie, the recipe is surprisingly rich, filling, and nutritionally complete.
The recipe can be made #vegan if substituting olive oil roux for butter.

The filling is onion, carrot, celery, peas, portobello, shitake, and trumpet mushrooms along with some soy based not-chicken. The gravy is a made with olive oil, flour, red wine, and oat milk. The crust is a vegan frozen pie crust from Whole Foods.
