#Eiweiß halb steif schlagen. Zucker #Glukosesirup #Honig #Ouzo #Vanille + Salz kochen, bis sich der Zucker gelöst hat. Weiter kochen. Jetzt kommt das Zuckerthermometer ins Spiel. bei 121°C die Hälfte in das Eiweiß gießen, weiter schlagen. Bei 145°C den Rest des Sirups in das Eiweiß gießen, schlagen, bis es eine kaugummiartige Masse ist. #Nüsse, #Mandeln + #Anis unterheben. Eine Form mit #Oblaten auslegen, die Masse einfüllen + mit Oblaten bedecken. Über Nacht erstarren lassen.

Der Likör ist fertig... 🎶🤩

Oder besser, der Rote Ouzo, nicht mit Kirsch sondern hier mit Himbeere angesetzt.

Jetzt noch kalt gestellt, und dann später mal probieren. 😋

#Paprika schwarz grillen, die Haut abziehen.
#Kreuzkümmel #Koriander.körner #Fenchel.samen rösten, mörsern.
Schwarze #Oliven entkernen, mit #Knoblauch schwarzem Knoblauch den gerösteten Gewürzen #Isot #Salzzitrone #Olivenöl + der gegrillten Paprika pürieren.
Nach Belieben noch 1 - 2 EL #Ouzo dazu, den hatte ich aber nicht. Geht auch ohne.
