In this family, late autumn foraging is all about these little guys, the Tricholoma portentosum, or charbonniers, streaked tricholoma, sooty head,...
We love them in lots of various dishes, from pizza, mushroom risotto, stews, oven fried, pickled as a winter preserve, you name it. They're great in every kind of way but I do have to advice caution not to pick them unless you're a seasoned forager with ample experience what to look for, because there's loads of very, very similar species of mushrooms that can be quite severely poisonous (see addendum).
Since now would be the time to find them in your local forests (northern hemisphere) and if they interest you but you lack experience in correctly identifying them, I suggest joining forces with some local mycologist, perhaps at your nearest mycological club / association / society. These are not the trophy hunter's mushrooms anyway so there's a good chance you'll even make new friends and, at the bare minimum, enjoy your walks in the woods in company. Also important now that predatory wildlife is getting ready for the winter!

Addendum: On top of the two similar inedible or even poisonous species in the Tricholoma genus listed by Wikipedia article linked above (Tricholoma virgatum and Tricholoma pardinum), perhaps even more similar looking mushrooms to Tricholoma portentosum that you wouldn't want to accidentally consume even in the tiniest amounts include Tricholoma bresadolanum, Tricholoma terreum, Tricholoma virgatum, Tricholoma sciodes and Tricholoma josserandii. As they tend to grow in similar conditions at the same time of the year, often side by side to the sought-after ones or in mixed species clusters, I suggest positively identifying each and every single specimen of fungi that you collect.

We had about two hours of sunshine in the afternoon today so I took advantage of it and went for a short stroll in the woods with a pocketable large-ish sensor camera in my hand. It's really interesting how fast new beds of mushrooms crop up in spite of cold-ish late autumn weather.

Lactarius rufus, commonly known as the rufous milkcap or red hot milk cap. Shame they're considered inedible due to its acrid taste and even potentially poisonous (causing gastric upset), because they were everywhere, growing at the margins of a pine forest in large clusters under moss and grass. Still pretty though.

Today's trophy. I just love these cauliflower mushrooms (Sparassis crispa). They have a long season so can be found even when there's not much else around, they're easy to spot, just look at the base of pine trees, and they taste lovely especially with cheesy dishes like... pizza 😋
About the only nag I could possibly have with them is that they're a bit tricky to clean, but do similar you'd do with a real cauliflower, breaking it into individual florets and it'll be a whole lot easier.
Here's another fun fact about these mushrooms: leave their base intact and they'll grow a new head right where you took one home from. Just remember where you found it and collect more in about a month's time. Assuming nothing else gets to it fist, of course. Deer and wild boars also seem to love them.

Foraging situation: No edible boletes of any kind (summer ceps, penny buns, pinewood king boletes,...) to be found anywhere and very few other edible mushrooms with the exception of horn of plenty and yellow foot mushrooms (photos 2 and 3). It's still possible to collect chestnuts though.

The shaded side of the base of this beech tree's trunk was literally carpeted with invading hairy bracket mushrooms (Trametes hirsuta). I thought it looked cool how they changed in colour from white-ish gray leathery top to subdued Bordeaux spongy underside with the changing angle as I walked past them. And when I saw this xylophagous saprophyte, a plant pathogen, itself being invaded by long hairy moss poking through them I thought that's it, I've simply got to share this with you!

With every new day, the woods produce new species of mushrooms that grow in autumn in temperate mixed forest. So I'm going on foraging hikes nearly every day or at least I try to, time and weather permitting. On top of mushrooms, I've also collected a lot of chestnuts and some hazelnuts and walnuts, too.
