¿Sabían que el nombre del burrito es mucho más viejo que la Revolución Mexicana y ya venía en los libros desde finales del siglo XIX?

Casi todo el mundo se sabe el cuento de que este platillo nació en Ciudad Juárez, Chihuahua, durante los tiempos de la Revolución Mexicana. Dice la leyenda norteña que un señor llamado Juan Méndez envolvía la comida en tortillas de harina gigantes para que no se enfriara y la cargaba en un burro, así que cuando la gente lo veía llegar, gritaba que ahí venía el hombre de los burritos.

Pero si nos metemos a revisar los papeles y la historia real, resulta que el invento es bastante más antiguo. El registro escrito más viejo de todos está en el Diccionario de Mexicanismos de Félix Ramos y Duarte, que se publicó de forma oficial en el año 1895. En ese libro viene la palabra burrito y la explican de forma muy fácil: una tortilla enrollada con carne o con cualquier otro guisado adentro. Además, el autor aclara que en Guanajuato ya usaban esa palabra para referirse a lo que la gente del centro de México llamaba taco.

Los expertos en comida explican que a finales del siglo XIX le pusieron ese nombre por una cuestión puramente de vista. Los cocineros de la época bautizaron al platillo así porque la tortilla bien enrollada y con las puntas dobladas se parecía un montón a las orejas caídas de los burros, o también al aspecto que tenían las cobijas y los bultos de ropa cuando los amarraban bien apretados sobre el lomo de los animales de carga.
