Following this recipe here regarding the spices, but with more veg &, because I am lazy, without deseeding the tomatoes, turning this more into a stew-like dish.

Yum! I tried to find the recipe for something I ate in a restaurant - while it's not the same dish, it's something I am making again and again for years. Best with some naan on the side.
