Crumb shot from yesterday's reptile heat-pad-assisted rise/proofing. The combination of 75% Red Lammas, 25% #Mulika, added olive oil has produced a very nicely textured bread with a distinctly nutty flavour. Will definitely use this mix again.

The 2Lb/1Kg bread I made yesterday with #Holdfast grain was a bit of a failure. The flavour is good - a lot milder than the #mulika, perhaps creamy - but the shenanigans trying to extract it from tin has made it crumbly on the outside. Even if I use my sharpest knife, corners fall off. Looks like I'll be making 2Lbs of breadcrumbs today and will try again after reseasoning the tins. On the meantime, it'll be a 1Lb loaf in my normal tin, again using Holdfast.

Today in #homebaking I'm trying a "white" loaf, again with #mulika grain and have sifted out all the bran (will be used to make muesli) with a 0.5mm sieve. It's currently at the autolyse stage and then it'll be time for the Saturday #dogwalk. It's all go here! Well, I must say that today's #breadmaking with the new #Mockmill100 and #mulika (population) wheat berries has taken my craft to a whole new level! I sifted out the bran using a coarse sieve and we'll have that for breakfast - it'll be left in next time. Delighted to say that my go-to bread recipe worked well for fresh-milled flour, and the flavour is just amazing. If anyone has recommendations for UK wheat berry suppliers, please shout!
